Smoked Almond Triple-Cheese Logs image

4 cups shredded sharp Cheddar cheese (16 oz)
2 packages (3 oz each) cream cheese, softened
3/4 cup crumbled blue cheese (3 oz)
2 medium green onions, finely chopped (2 tablespoons)
1 tablespoon Worcestershire sauce
1 teaspoon red pepper sauce
1 cup smoked almonds, finely chopped
1 tablespoon finely chopped fresh rosemary leaves

Steps:

  • In food processor bowl with metal blade, place Cheddar cheese, cream cheese and blue cheese. Cover; process, using quick on-and-off motions, until blended. Add onions, Worcestershire sauce and pepper sauce. Cover; process just until blended.
  • Divide cheese mixture into 3 parts. Shape each part into 6-inch log. In shallow dish, mix almonds and rosemary; roll cheese logs in almond mixture. Wrap separately in plastic wrap or waxed paper. Refrigerate about 2 hours or until firm.

3/4 cup whipped cream cheese, softened
2 tablespoons 2% milk
1 cup shredded sharp cheddar cheese
1 cup shredded Swiss cheese
3/4 cup chopped smoked almonds
1/2 cup soft sun-dried tomato halves (not packed in oil), chopped
1/8 teaspoon pepper
1 French bread baguette (10-1/2 ounces), cut into 1/4-inch slices
Chopped fresh chives, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat cream cheese and milk until smooth. Stir in cheeses, almonds, tomato and pepper; spread over bread slices., Place on ungreased baking sheets. Bake until cheese is melted, 10-12 minutes. If desired, top with chopped fresh chives.

Smoked almonds and bacon provide rich flavor to a delicious dip featuring two types of cheese.

2 packages (8 ounces each) cream cheese, cubed
3 jars (5 ounces each) process sharp Cheddar cheese spread
1/2 cup milk
1 clove garlic, finely chopped
2 medium green onions, thinly sliced (2 tablespoons)
1/2 cup coarsely chopped canned smoked whole almonds
4 slices bacon, crisply cooked and crumbled
Assorted raw vegetables or breadsticks, if desired

Steps:

  • Heat cream cheese, cheese spread, milk and garlic in 2-quart saucepan over medium heat, stirring frequently, until cheese is melted and smooth. Stir in onions and 1/4 cup of the almonds.
  • Spoon into 1-quart slow cooker to keep warm if desired or into serving bowl. Sprinkle with bacon and remaining 1/4 cup almonds. Serve with vegetables. Dip will hold in slow cooker on Low heat setting up to 2 hours; stir occasionally. 32 servings (2 tablespoons dip each).

Smoked Salmon, Fennel and Goat Cheese Toasts image

8 ounces soft fresh goat cheese
1 1/2 tablespoons fresh tarragon, chopped
1 tablespoon fennel seed, finely crushed
2 teaspoons grated lemon peel
1/2 teaspoon black pepper, coarsely ground
2 1/2 tablespoons olive oil
30 thin slices baguette
12 ounces smoked salmon, thinly sliced
lemon peel strip, for garnish
tarragon, sprigs for garnish

Steps:

  • Preheat oven to 350°F
  • Mix first 5 ingredients in small bowl to blend.
  • Set aside.
  • Brush oil over both sides of bread.
  • Arrange bread in single layer on large baking sheet.
  • Bake until bread is just crisp, about 5 minutes per side. (Cheese mixture and toasts can be made 2 days ahead. Cover cheese mixture and chill. Cool toasts; store airtight at room temperature.)
  • Spread cheese mixture over toasts.
  • Top with salmon, trimming to fit.
  • Garnish with lemon peel strips and tarragon sprigs.
  • Arrange on platter and serve.
  • Makes 10 appetizer servings.
