SMOKED GOUDA MAC AND CHEESE
This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch casserole dish.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Melt butter in a small saucepan over medium heat. Stir in the flour and cook until a roux forms. Stir in the milk, salt and pepper; cook, stirring constantly, until sauce is smooth and thick and coats the back of a spoon. Remove from heat and stir in cheese.
- Combine cooked pasta and cheese sauce; transfer to prepared dish.
- Bake in preheated oven for 15 minutes, or until heated through.

- Bring a large pot of lightly salted water to a rolling boil over high heat; stir in the frozen ravioli and return to a boil. Cook uncovered, stirring occasionally, until the ravioli float to the top and the filling is hot, 6 to 8 minutes. Drain.
- Meanwhile, bring the half-and-half to a simmer in a saucepan over medium heat. Whisk in the Gouda cheese until melted; season with parsley and white pepper. Pour the sauce over the cooked ravioli to serve.

Steps:
- To make the cheese sauce melt the butter in a small saucepan over low heat.
- Add the flour and stir until well mixed and smooth.
- Add the milk and use a whisk to stir it into the butter and flour. Increase the heat to medium and bring the mixture to a boil. Then lower the heat. Cook over the lower heat for 2-3 minutes until thickened.
- Remove the sauce pan from the heat and add in the shredded cheese and salt. Stir until cheese is melted.

- Heat a small saucepan over low. Melt butter, then add garlic. Cook garlic 1 to 2 minutes, or until fragrant. Whisk in ground mustard, paprika and flour to form a roux. Slowly whisk in milk, whisking vigorously to ensure no lumps remain. Cook for 3 to 4 minutes, whisking occasionally, until it begins to thicken. - Heat the olive oil in a large skillet set over medium heat. In a resealable bag, toss together the chicken pieces, 2 tablespoons of flour, salt and pepper until well-coated. Add the chicken to the olive oil and cook, flipping as needed, until golden on each side, about 6-7 minutes.
- Melt 4 tablespoons unsalted butter in a large pot. Whisk in ¼ cup all-purpose flour until well combined. Cook for 2-3 minutes until golden.
