SMOKED HADDOCK FISH CAKES (FINNAN HADDIE AND POTATO CAKES)

Smoked Haddock Fish Cakes (Finnan Haddie and Potato Cakes) image

Crispy fish cakes made with smoked haddock and mashed potatoes will be a family favorite in no time!

Provided by Christina Conte

Time 35m

Number Of Ingredients 10

1 egg
breadcrumbs
olive oil
12 oz smoked haddock (or other flaky fish)
milk
12 oz mashed potatoes (floury potatoes are best)
1 egg
about 3/4 tsp Diamond Kosher or sea salt
freshly ground black pepper, as desired
chopped parsley, as desired

Steps:

  • Place the smoked haddock in a shallow pot and pour in enough milk to cover the fish.
  • Remove the fish and bring the milk to a boil.
  • Add the haddock again, reduce the heat and simmer for 4 minutes.
  • Remove the cooked haddock from the milk and set aside to cool. Next, remove the skin and flake the fish. Use the milk for a seafood chowder or Cullen Skink (you can freeze it to use later, too).
  • Put the mashed potatoes, flaked fish, 1 egg, salt, pepper and parsley into a bowl and mix together gently until well combined.
  • Form the potato and fish mixture into patties. You can make them smaller, as appetizers, or larger for a main dish serving.
  • Place on a cookie sheet and place in the fridge for about 15 minutes.
  • Beat the other egg and place in a tray or plate for dipping. In another tray or plate, place breadcrumbs. I like these trays. Dip each smoked haddock and potato cake in egg and coat evenly. Next, dip in the breadcrumbs and place on a tray or cookie sheet.
  • Put some oil in a nonstick or stainless steel frying pan and heat on medium high. Start adding a few smoked haddock fish cakes at a time. Fry until nicely golden brown before turning.
  • When cooked, remove from pan and place on paper towel-lined plate. Serve hot and enjoy!

SMOKED HADDOCK WITH BUTTERED SPINACH & MUSTARD SAUCE

Smoked haddock with buttered spinach & mustard sauce image

A light fish dish with new potatoes, topped with a poached egg and cream sauce - suitable for brunch, lunch or dinner

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 35m

Number Of Ingredients 9

2 large handfuls baby spinach
250g new potato , thickly sliced
2 undyed smoked haddock fillets, about 140g each
splash white wine vinegar
2 eggs
2 tbsp wholegrain mustard
3 tbsp low-fat crème fraîche
juice ½ lemon
1 tbsp finely snipped chive

Steps:

  • To make the sauce, gently heat and stir together the mustard and crème fraîche in a small saucepan, then turn off the heat and set aside.
  • Put the spinach in a colander and put in the sink. Pour over kettle-hot water to wilt, cool under cold water, squeeze out as much water as possible, then set aside.
  • Put the potatoes in the bottom part of a tiered steamer, just cover with water and bring to the simmer. Lay the fish fillets in the first tier of the steamer and, after the potatoes have cooked for 5 mins, sit on top, cover and steam for a further 5 mins or until the fish is cooked through. While the fish and potatoes are cooking, bring another small pan of water to the boil, add the vinegar and poach the eggs to your liking - we did ours for 2 mins.
  • Gently reheat the sauce and add the lemon juice and a small splash of water if it's a little too thick. Season and stir in the chives. Lift the fish tier off the potatoes, drain the potatoes, then tip them back into the pan. Add the spinach and a drizzle of the sauce, and mix to combine. Divide the potatoes and spinach between 2 plates, sit a fillet of haddock on each and top with a poached egg. Drizzle the remaining sauce over the eggs and around the fish, and serve straight away.

SPICED SMOKED HADDOCK FISH CAKES

Spiced smoked haddock fish cakes image

Get the best bite with these extra-crunchy haddock fish cakes

Provided by Margaret Hickey

Categories     Buffet, Dinner, Lunch, Main course, Snack, Supper

Time 1h40m

Yield Makes 8 fishcakes

Number Of Ingredients 12

900g floury potatoes , such as Maris Piper or King Edward, peeled and cut into chunks
350g undyed smoked haddock fillet
300ml milk
about 5 tbsp groundnut oil or sunflower oil
1 large onion , finely chopped
1 tsp grated fresh root ginger
2 tsp paprika
2 tbsp fresh coriander , chopped
juice of half a lemon
1 large egg , beaten
100g jumbo oats
lemon wedges, to serve

Steps:

  • Cook the potatoes in lightly salted boiling water for 15-20 minutes or until tender. Meanwhile, put the smoked haddock in a large shallow microwaveproof dish and pour over the milk. Cover with cling film, pierce a few times, then microwave on High for 4 minutes or until the fish flakes easily. (Alternatively, simmer in a pan on the hob for 5 minutes.)
  • While the fish cooks, heat 1 tbsp of the oil in a frying pan and fry the onion, ginger and paprika for about 5 minutes until the onion is soft. Remove from the heat.
  • When the potatoes and fish are ready, drain them both. Mash the potatoes with a potato masher, and remove the skin and any bones from the fish. Mix the potatoes, fish and onion with the coriander, lemon juice and plenty of salt and pepper. Divide the mixture into eight, roll each portion into a ball and flatten slightly. Dip into the beaten egg, then coat with the oats. Put on a plate, cover with cling film and chill in the fridge for half an hour or so to firm them up a bit.
  • Heat 2 tbsp oil in a frying pan (preferably non-stick if you have one) until very hot. Fry 4 fish cakes at a time for 5-6 minutes on each side, turning once, until they are golden and crisp. Lift out and drain on kitchen paper. Wipe the pan clean with kitchen paper and fry the remaining fish cakes in another 2 tbsp oil, making sure it's really hot before you put them in. Serve hot, with lemon wedges and a cucumber and yogurt dip (bought or home-made).

SMOKED HADDOCK GRATIN

Smoked haddock gratin image

A rich and creamy fish pie that's packed with hidden vegetables like spinach and tomato - a family bake

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 45m

Number Of Ingredients 10

500g leaf spinach
butter, for greasing
about 500g (2 fillets) smoked haddock, skinned and cut into 4 portions
12 cherry tomatoes
200ml double cream or crème fraîche
juice ½ lemon
100g cheddar cheese, grated
2 spring onions, sliced
small grating nutmeg
handful dried breadcrumbs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place the spinach in a large colander in a sink and carefully and slowly pour over a kettleful of hot water to wilt it. Cool again under the cold tap then squeeze out as much liquid from the spinach as possible. Butter a medium gratin dish. Roughly chop the spinach and scatter evenly over the base of the dish. Season the spinach lightly with salt and pepper and lay the haddock fillets, skinned side down on top. Nestle the tomatoes among the haddock fillets.
  • Mix all the ingredients for the topping, except the breadcrumbs, in a small bowl and season with lots of pepper and a little salt. Dollop and spread the mixture over the fish and spinach. Scatter everything with the breadcrumbs and bake for 30 mins until bubbling and golden. If you like things really grilled finish for a few mins under a hot grill. Serve straight from the dish.
