I like omelets but don't always have time to stand by the stove. That's why I favor this oven-baked variety that I can quickly pop into the oven at a moment's notice. My family frequently requests this for Sunday brunch. They always empty the dish. -Ellen Bower, Taneytown, Maryland

8 large eggs
1/2 cup half-and-half cream
1 cup shredded cheddar cheese
1 cup finely chopped fully cooked ham
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion

Steps:

  • In a large bowl, whisk eggs and cream. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9-in. square baking dish. , Bake at 400° for until golden brown, 20-25 minutes.

This is easy to make (the night before), and yummy to eat the next morning. I made this for brunch and my friends wanted the recipe. Enjoy!

8 slices bread, cubed (I like to use whole wheat, or rye-pumpernickel)
1 lb sharp cheddar cheese, grated
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 cup margarine, melted

Steps:

  • Grease a 9x13 inch pan.
  • Add cubed bread.
  • Spread cheese over bread.
  • Beat eggs, add milk and salt; beat.
  • Add melted margarine and pour over bread.
  • Refrigerate overnight.
  • Top with mushrooms, onion, green peppers, olives, etc.
  • Bake at 350 degrees Fahreneheit for 45 to 55 minutes.
  • Enjoy!

  • Preheat the oven to 350F. Line a muffin tin with muffin liners. I prefer silicone liners for easy clean up, but paper may also work--I've used this brand with success. If you're using paper, peel the wrapper before storing the cups in the fridge or freezer.
  • In a large skillet, over medium-high heat, (I use my cast iron skillet), heat the olive oil. Add the chopped bacon, diced green onions, and diced bell pepper. Wait to add the spinach, if using. Saute the mixture for 10 minutes, until the veggies "sweat" and soften and the bacon starts to brown on the tips. If using baby spinach, add the spinach and cook for another 1-2 minutes, stirring until the spinach is wilted. If there's lots of fat in the bottom of the pan (since bacon can differ so much in fat content), drain it before the next step.
  • Spoon 1 tablespoon of the veggie/bacon mixture into each muffin cup. Pour the egg mixture over the top of the filling.
