BANANA BARS
Wonderful, soft banana bars with banana frosting. Yum, yum!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
- To make the frosting: In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth. Spread over cooled bars and then cut into squares.

- Generously grease 24 mini muffin cups with coconut oil, or spray with cooking spray. In large bowl, place cereal; set aside. In food processor, add dates, walnuts and 1 tablespoon water; pulse in 1-second bursts about 30 seconds or until finely chopped. Add oats, banana and chia seed; process until mixture comes together into a ball.
- Transfer date mixture to bowl of cereal. Lightly spray hands with cooking spray; use hands to blend mixture. Use fingers to firmly press mixture evenly into muffin cups, pressing down to compact the mixture until firm.
- Refrigerate about 1 hour or until firm. Store covered in refrigerator up to 1 week.

- In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.

UNIQUE AND YUMMY BANANA CRUNCH BREAD
Everytime I make this bread, someone thinks its an old family secret and I have been told by many that it is the best banana bread ever. I originally found it in a magazine 10 years ago. The ginger adds a unique taste and the crunch topping is very yummy.

- Heat oven to 350 degrees. Grease 9x5x3-inch loaf pan.
- Combine flour, sugar, baking powder and salt in large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in bananas, walnuts, ginger, eggs and vanilla until mixture is just moistened. Spoon batter evenly into prepared pan.
- Prepare Crunch Topping: Combine flour, sugar, butter and cinnamon in a small bowl. Sprinkle evenly over batter.
- Bake at 350 degrees oven for 70 minutes or until wooden pick inserted in center comes out clean. Cool bread in pan 10 minutes. Remove bread and cool on wire rack completely. Sprinkle with confectioners' sugar.
