BLACK-EYED PEAS WITH LEFTOVER SMOKED HAM
Perfect black-eyed peas to ring in the new year. Serve with bread and southern-style hot sauce.

Steps:
- Heat bacon drippings in a large pot over medium heat. Cook onion and celery in the hot drippings until softened, 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute. Add chicken broth and peas and increase heat to medium-high.
- Add ham, tomato sauce, bay leaves, and 1/2 of the following spices: paprika, chili powder, white pepper, and oregano; bring to a boil. Reduce heat to low, cover, and simmer until beans are tender, about 1 hour 45 minutes. Add remaining spices and season with salt and black pepper. Cook, uncovered, for 30 minutes.
- Remove bay leaves before serving.

SMOKED HAM PIE - SWEDISH QUICHE (SKINKPAJ)
Another Swedish recipe that I am posting for ZWT6. On Herrgårdsost Herrgårdsost is a semi-hard yellow cheese made from cow's milk with a mild nuttiness similar to Gruyere or aged cheddar. It has a few small holes (like Swiss cheese does) and is produced in large wheels coated with yellow wax. The name means "manor house cheese."

- Press pastry dough into baking pan.
- Set oven to 350°F
- Combine egg yolks, sour cream, ham, and cheese. Pour over dough, like a pizza.

SMOKED TROUT PIE
This recipe is from Justine Schofield Everyday Gourmet show and the finished dish looked delicious and hoping to try it soon, it was cooked up by guest chef Andy Allen the 2012 Australian Master Chef. Times are estimated. The only change I would make is to use cheddar cheese instead of parmesan mainly because my family does not like parmesan.

Steps:
- Remove the trout flesh from the bones, and set aside in a bowl.
- Place the bones into a medium sized saucepan and pour over cold water to half-fill the pan and bring to the boil for 10 minutes to make stock.
- Meanwhile, heat butter and boil in a frying pan over low heat and sauté the capsicum/bell pepper and fennel bulb until soft.
- Strain the stock into a jug, you need approximately 300 ml.
- Add the stock to the capsicum/bell pepper and fennel and simmer until it has reduced by half.
- Add the cream and trout and simmer for 10 minutes.
- Add the dill, lime zest and juice and cook a further 2 minutes.
- Place the trout mixture into one pie dish or two individual dishes.
- Tear the bread into pieces and place on a baking tray and place in the oven until golden brown on a low heat (about 150C) until they are dried out and scatter the toasted bread pieces on top of the pie and sprinkle with parmesan.
- Cook under a preheat grill/broiler for 2 minutes until golden and cheese is melted.
- Top with dill and fennel fronds.

SMOKED SAUSAGE POT PIE
Fall is the season for sausage and for comfort food. Convenience foods help save some time for this a pot pie, made with smoked sausage. Puff pastry, pulled from the freezer and thawed, forms the crust, and fully cooked smoked sausage, a few frozen hash browns, and frozen mixed vegetables combine in the yummy filling.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a 2 1/2-quart casserole dish with cooking spray.
- Roll out puff pastry to the dimensions of the casserole dish, adding 1 inch on all sides. Cover and place in the refrigerator.
- Melt butter in a large skillet over medium heat. Add onion; cook, stirring occasionally, until onion is soft and translucent, 5 to 7 minutes. Stir in garlic, herbes de Provence, salt, and pepper; cook for 1 more minute, stirring occasionally. Add flour and whisk to combine. Cook for 1 minute.
- Pour in broth and cream gradually, stirring continuously until sauce bubbles. Add sausage pieces, vegetables, and potatoes. Cook, stirring continuously, until mixture bubbles again, 4 to 5 minutes. Pour into the prepared casserole dish.
- Place puff pastry on top of the filling, letting excess dough hang over all sides. Brush pastry with the beaten egg.
- Bake in the preheated oven until pastry is browned and the pot pie is bubbly, about 45 minutes. Cover loosely with foil after 25 minutes, to prevent overbrowning.
- Remove from oven and cool on a rack for about 15 minutes. Serve warm.

- For the jelly, put the ham hock in a large pan and cover with cold water. Bring to the boil and skim off any residue that forms on top. Add all the stock ingredients apart from the gelatine and simmer for 2 hours. You may need to top up the water to ensure the hock is covered.
- Remove the hock from the liquid. Sieve, discard any solids, then return the liquid to the cleaned pan and bubble over a high heat until reduced to about 600ml (about 90 minutes). Remove from the heat and season to taste. Put the gelatine in a small bowl of cold water and leave until floppy (about 5 minutes). Squeeze out the excess water, then add the gelatine to the stock. Stir until dissolved. Cover and set aside.
- For the filling, put the chicken thighs between 2 sheets of cling film and bash with a tenderiser/rolling pin until flat. Season generously with salt and pepper and sprinkle with the chopped tarragon. Once the hock is cool enough to handle, cut off and remove the fatty skin (discard). Remove the meat from the bone and chop roughly or shred.
- Grease and line the base and sides of the tin with baking paper. For the pastry, put the flours and salt into a large heatproof bowl. Put 150ml water and the lard into a pan and bring to the boil (see safety tip). Add the hot water/lard mixture gradually to the flour mixture in the bowl, mixing in with a table knife to bring the dough together. While the dough is still hot (but cool enough to handle), knead it briefly on a lightly floured work surface until smooth. Pinch off a third of the dough and set aside.
