This recipe came from Paula Deen who has a cooking show on the Food Network. This chicken is so good. The house seasoning is made in bulk. You can store this for several months.

4 eggs
1/3 cup water
1 cup hot red pepper sauce (does not make chicken spicy)
2 cups self rising flour
1 teaspoon pepper
2 1/2 lbs chicken, cut into pieces
peanut oil or vegetable oil
1 cup salt
1/4 cup pepper
1/4 cup garlic powder

Steps:

  • Mix seasoning together and store in airtight container for up to 6 months.
  • In medium bowl, beat eggs with water. Add enough hot sauce so mixture is bright orange.
  • In another bowl, combine flour and pepper. Season chicken with house seasoning. You can let the chicken sit in hot sauce for up to 1 hour. It will not make the chicken spicy.
  • Dip Chicken in egg and coat well with flour mix.
  • Heat oil to 300 degrees in deep pot. Don't fill pot more than half full of oil.
  • Fry chicken in oil until brown and crispy. Dark meat goes in first and takes 13-14 minutes. White meat takes 8-10 minutes.
  • Preparation depends on how long you let the chicken soak in hot sauce.

Fresh sage or parsley are the herbs of choice to complement the flavor of this pan fried chicken. If you prefer, you may substitute all white meat or all dark in the recipe.

1 pound chicken, washed and cut into 8 serving pieces
2 cup all-purpose flour
0.5 cup snipped fresh sage or parsley
1 teaspoon cracked black pepper
3 eggs
0.5 cup milk
Peanut oil for frying
Small fresh sage leaves
Lemon wedges

Steps:

  • Sprinkle chicken pieces with salt and pepper. Refrigerate, covered, 2 to 4 hours.
  • In bowl combine flour, the 1/2 cup herbs, and pepper; set aside. In shallow dish whisk together eggs and milk. Dip chicken in egg mixture then coat with flour mixture. Repeat.
  • In deep 12-inch skillet add oil to depth of 1 inch (oil will rise as chicken is added.) Heat oil to 350 degrees F over medium-high heat.
  • Gently lower four chicken pieces at a time into hot oil, (oil may spatter). Cook 14 to 16 minutes, turning after 8 minutes, or until brown and crisp and chicken is no longer pink (170 degrees F for breasts, 180 degrees F for thighs). Oil temperature will drop when chicken is added; adjust heat as needed to maintain oil temperature at 325 degrees F. Drain chicken on wire rack or paper towels. Place in preheated 300 degree F oven while frying remaining chicken. To serve, top with sage leaves and lemon wedges. Makes 6 servings.

2 cups chicken, cooked, cut in small bite-sized pieces
4 cups pasta, cooked and drained (approximately 2 cups uncooked); penne, cavatappi, or rigatoni works well
3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tablespoons flour
1/2 cup sour cream
1 cup milk
3 cups cheese, grated (cheddar, colby jack, Swiss, or a combination), with 1/2 cup reserved for sprinkling on top
1/2 teaspoon red pepper flakes
salt and black pepper to taste

Steps:

  • Preheat the oven to 350°F. Lightly grease the inside of a 9x13-inch baking dish. In a large skillet, melt the butter over medium heat and cook the onion and garlic until the onion is translucent, about 5 minutes, stirring occasionally. Add the flour and whisk together for about 1 minute, this will allow the flour to cook just a little before adding the other ingredients. Add the sour cream and milk, and continue whisking until the mixture has thickened. Remove from heat and add all but ½ cup of the cheese. Add the red pepper flakes, salt, and black pepper, cooked chicken, and cooked pasta. Stir together, then layer evenly in the bottom of the prepared baking dish. Sprinkle the remaining cheese evenly over the top of the casserole and bake for 30 minutes or until the cheese on top is melted and the sauce is bubbly. Remove the casserole and let it sit for about 15 minutes prior to serving.

This is a great recipe if you like fried chicken! I usually place my chicken in the buttermilk mixture and let sit over night until the next evening when I prepare it. I also add more hot sauce to the buttermilk. Paula Dean definitely knows how to fry chicken!

1 quart buttermilk
1 tablespoon hot sauce
2 teaspoons Lawry's Seasoned Salt, divided
1 (4 -5 lb) chicken, cut into 8 pieces
2 cups all-purpose flour
1 teaspoon garlic salt
1 teaspoon ground red pepper
1 teaspoon onion powder
peanut oil (for frying)

Steps:

  • In a large bowl place the buttermilk, hot sauce, 1 1/2 teaspoons of the seasoned salt and cut up chicken, cover and refrigerate at least 8 hours or up to 24 hours Drain and discard buttermilk mixture.
  • In shallow dish combine flour, garlic salt, red pepper, onion powder and remaining 1/2 teaspoons seasoned salt. Dredge chicken in flour mixture and place on wire rack and let sit for 15 minutes.
  • In a large (preferably) cast-iron skillet pour oil to a depth of 3 inches and heat to 350 degrees.
  • Fry chicken pieces in batches, for 12 to 15 minutes per side or until a thermometer inserted into the thickest part of the chicken registers 165 degrees. Drain on a clean wire rack over paper towels.
  • Enjoy!

2 1/2 lbs cut into pieces chicken
2 cups self rising flour
1 cup hot red pepper sauce
3 eggs

Steps:

  • Heat the oil to 350 °F in a deep pot. Do not fill the pot more than 1/2 full with oil.
  • In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

This wonderful recipe is courtesy of Paula Deen, but I have tweaked it slightly buy I adding in some extra spices to the flour mixture, use kosher salt only for this --- this recipe makes a lot so make certain that you have a large rack that will fit onto a large baking sheet --- plan ahead the chicken will need to marinate overnight, cooking time is oven time.

2 whole chickens (3 pounds each cut into 8 pieces)
6 cups buttermilk (can use a little less)
2 cups all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon paprika
1 pinch cayenne pepper (optional)
1 tablespoon kosher salt (use only kosher salt NOT table salt!)
3 teaspoons fresh ground black pepper
vegetable oil (for frying) or vegetable shortening (for frying)

Steps:

  • Place the chicken pieces in a large bowl; pour the buttermilk over and toss with hands to coat.
  • Cover and refrigerate overnight.
  • In a large bowl combine the flour with kosher salt and black pepper.
  • Remove the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture.
  • Place the coated chicken on a large platter (make certain to have all of your chicken coated before frying).
  • Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F.
  • Working in batches carefully place several pieces of chicken into the oil and fry about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven) do not crowd the pieces while frying.
  • Remove the chicken from the oil and place each piece on a metal baking rack on a sheet pan.
  • Allow the oil to return to 360 degrees F before frying the next batch.
  • When all the chicken is fried bake at 350 degrees F (set oven rack to lowest position) for about 30-35 minutes or until the chicken is no longer pink.

This is very delicious, and easy to make! Placing the chicken on the cooling rack is REALLY what makes it great, no need to turn them. I double the mustard/water combo, because I think this makes the chicken more moist. If they are not brown enough for you, place under broiler for a few minutes after it is baked to get a nice brown color. Also, a drizzle of melted butter before baking is a nice touch. This is from Paula Deen, hope you enjoy! I am trying to say Panko bread crumbs in the ingredients, but it will not let me. P.S. I am SO in love with Panko bread crumbs, if you have not yet tried them, please do, you will love them! : )

4 tablespoons olive oil, divided

Steps:

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with heavy-duty aluminum foil. Place a cooling rack over pan and spray rack with nonstick cooking spray.
  • In a shallow dish, combine bread crumbs, cheese, 2 tablespoons olive oil, thyme, salt and pepper, to taste.
  • In a separate shallow dish, combine mustard, water, salt and pepper, to taste, and remaining olive oil.
  • Coat each chicken breast with mustard mixture; dredge each in bread crumb mixture.
  • Place on prepared rack in pan.
  • Bake for 25 to 30 minutes, or until chicken is golden brown.
