What do you get when pork chops and Swiss cheese meet that standby, French-fried onion-topped, green bean casserole? A tasty, well rounded dinnertime hit.

Steps:
- Heat oven to 350°. Spray square baking dish, 8x8x2 inches, with cooking spray. Trim fat from pork if necessary. Sprinkle both sides of pork with salt and pepper.
- Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 10 minutes, turning once, until brown. Place in baking dish.
- Mix remaining ingredients except onions in medium bowl. Spread over pork chops.
- Bake uncovered about 50 minutes or until mixture is bubbly. Sprinkle onions over casserole. Bake uncovered 5 minutes.

LIMA BEANS AND PORK CHOPS
Steps:
- Preheat the oven to 350 degrees F.
- Cook lima beans in salted water until almost tender, and reserved 1/2 cup of the cooking liquid. Pour the lima beans into a large flat baking dish with the reserved liquid. Stir in the salt, pepper, sugar, mustard, parsley, savory, thyme, and chopped onion. Mix well.
- Heat the butter in a large skillet over medium-high heat. Add the chops and cook, turning once, until well browned. Place the chops on top of the beans.
- Mix bread crumbs with sour cream. Spread over chops. Cover dish and bake for 8 minutes. Uncover the chops and continue baking, until lightly browned, about 8 minutes more.
- Arrange the chops on a bed of the lima beans on a large platter and sprinkle with parsley. Serve.
SMOKED PORK CHOPS
There are pork chops and then there are smoked pork chops. The rub has just the right amount of sweetness and saltiness that complements the smoky flavor perfectly. Oak is my wood of choice for these but feel free to substitute any hard wood chips.

- Preheat the smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
- Combine salt, brown sugar, pepper, paprika, ground mustard, garlic powder, onion powder, and oregano in a small bowl. Stir until evenly combined. Sprinkle over both sides of each pork chop.
- Place pork chops directly on the smoker grate. Smoke for 2 hours 30 minutes. Remove chops from the smoker and let rest for 10 minutes.

PORK CHOPS & MUSTARDY BUTTER BEANS

- Heat 1 tbsp of the oil in a saucepan. Add the onion and fry over a medium heat for 10 mins, or until softened. Add the garlic and cook for 1 min. Stir through the butter beans and stock and bring to a simmer. Add the spinach. Cover and cook for 3 mins or until the spinach is wilted.
- Blitz the mixture using a hand blender for 10 secs, leaving some chunky, whole beans. Stir through the crème fraîche and mustard and season generously, then simmer for 3 mins to thicken. Set aside.
- Season the pork chops on both sides. Heat the remaining oil in a non-stick pan over a medium-high heat. Hold the chops on their sides with a pair of tongs to brown the fat. Cook each one on either side for 7 mins or until cooked through. Spoon the beans onto plates, slice the pork and arrange on top.

PORK CHOPS WITH STUFFING AND GREEN BEANS
As with most of my dishes, this was born of lack of inspiration and sheer laziness. I had a yen for stuffed pork chops but not enough yang to actually make them. I found lots of recipes here for pork chops with stuffing but none with the green bean/onion layers which add moisture & flavor to the dish. Of course, the pan drippings left from browning would be a wonderful gravy starter if you're so inclined. This was an invention which pleased our palates immensely!

- Preheat oven to 350º F.
- Coat an 11"X7" baking dish with cooking spray.
- Season both sides of pork chops with thyme, crushed rosemary & black pepper. **(note - I chose not to add salt as prepackaged stuffing mixes usually have a very high sodium content).
- Heat a large skillet over medium-high flame & add the oil. When hot, add the chops. Brown 3-4 minutes per side.
- Prepare stuffing mix per package directions. Set aside.
- Drain green beans & spread in bottom baking dish. Distribute onion rings evenly atop the green beans.
- When pork chops are browned, arrange them on top of onions.
- Add stuffing mixture to dish, filling in spaces around and between chops.
- Cover loosely with foil & bake 35 minutes. Remove foil & bake another 10 minutes or until meat is no longer pink in the center.
- ** Note - I used thick, boneless chops. If you use thinner ones, adjust bake time accordingly unless you enjoy dry pork!

- -Pre-heat oven to 400 degrees.
- -Heat about 1/2" oil in a 12" skillet.
- -Brown pork chops in oil; about 5 minutes per side.
- -Use 2 corning ware dishes: Between the 2 dishes divide 1/4 teaspoons salt and 1/4 tsp pepper.
- -Put 3 pork chops in each dish.
- -Add potatoes, green beans, onions and oil from skillet.
- -Add more salt and pepper on top of everything. Probably 1/4 tsp salt and 1/4 tsp pepper.
- -Cover with aluminum foil. Bake for 1 hour.
