4 oz lox or smoked salmon (*See Note #3 below)
1-2 ripe avocados (*peeled & sliced)
8 oz strawberries *sliced (*sliced)
1/2 cup pomegranate seeds
1 small eggplant (*See Note # 4 below)
1 bunch asparagus (*See Note 5 Below)
sm container fresh chives (*chopped)
1 sm english cucumber (*cut into coins)
1-2 cups arugula
1-2 heirloom tomatoes (*sliced)
1 sm red onion (*thinly sliced)
1 cup favorite sprouts or micro greens
1/4- 1/2 cup capers (*drained)
2-4 over easy eggs or
2-4 hard boiled eggs (*See note #6 below)
fresh squeezed lemon juice

Steps:

  • Toast bread or bagel.
  • Spread bagel or bread with cream cheese and layer on smoked salmon.
  • Top the bagel half or bread slice with favorite toppings from above.

Steps:

4 bagels (cut in half and toasted)
1/2 lb of norwegian smoked salmon (or lox)
1 large tomatoes, sliced evenly
2 hard-boiled eggs, sliced
4 lettuce leaves (washed and dried)
1 lemon, sliced
4 parsley sprigs, divided
1 (3 ounce) package cream cheese
4 green olives
3 tablespoons capers
1 green onion, finely chopped
1 green pepper, sliced thinly

Steps:

  • Arrange smoked salmon, thinly sliced, sliced red onions, 2 leaf lettuce, 4 slices tomatoes, hard boiled eggs, lemon and parsley sprigs on a nice pretty plate. Add cream cheese in the middle with spreading knife.
  • Fill bowls with green and black olives, capers, chopped green onions, thinly sliced green and red peppers for garnish.
  • Toast bagels, bagels in a basket lined with a cloth napkin.
  • Optional! Whip cream cheese until soft and fold in chives or dill for spreading on the bread.

8 tablespoons cream cheese
4 tablespoons drained capers
1/4 cup finely chopped dill
1/2 pound thin smoked salmon slices
4 slices red or Vidalia onions

Steps:

  • Slice the bagels through the center, sandwich fashion.
  • Toast the cut side of each bagel until golden brown.
  • Smear each bagel half with one tablespoon of cream cheese. Scatter equal amounts of capers and dill over four bagel halves. Press down lightly with a fork to make the capers and dill adhere.
  • Cover each smeared bagel half with equal portions of salmon slices. Cover each with one onion slice. Top each sandwich with a second bagel half and press.
