Hearty appetites are sure to be satisfied with this great combo of zippy smoked sausage and colorful vegetables. Using a frozen vegetable medley makes it versatile and easy to fix.

1 package (19 ounces) frozen garden vegetable medley
1/3 cup chopped onion
1 tablespoon canola oil
1/2 cup water
1/2 cup ketchup
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon honey
1 teaspoon ground mustard
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 pound smoked sausage

Steps:

  • Cook vegetables according to package directions. , Meanwhile, in a large skillet, saute onion in oil until tender. Stir in the water, ketchup, vinegar, Worcestershire sauce, honey, mustard, paprika, salt, sugar, pepper and hot pepper sauce. Add sausage. , Bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until sauce is slightly thickened and sausage is heated through, stirring occasionally and turning sausage once. Serve with the vegetable medley.

1 large sweet onion, halved and sliced
1 medium yellow summer squash, halved and sliced
1 medium zucchini, halved and sliced
1 medium sweet yellow pepper, chopped
1 medium green pepper, chopped
1 medium tomato, chopped
3/4 cup sliced fresh mushrooms
1/2 cup Greek vinaigrette

Steps:

  • Preheat oven to 400°. Place the first 9 ingredients into a greased 15x10x1-in. baking pan. Drizzle with vinaigrette; toss to coat. Bake, uncovered, 15 minutes. Remove pan from oven; preheat broiler. Broil sausage mixture 3-4 in. from heat until vegetables are lightly browned, 3-4 minutes.

4 link (4" long x 1-1/8" dia)s smoked sausage links, sliced
1 yellow squash, finely chopped
1 large onion, finely chopped
1 orange bell pepper, finely chopped
1 yellow bell pepper, finely chopped
4 tablespoons butter, cut into small pieces
½ teaspoon seasoned salt (such as Lawry's®), or to taste
½ teaspoon garlic powder, or to taste
1 pinch ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine potatoes, sausage, squash, onion, bell peppers, butter, seasoned salt, garlic powder, and pepper in a 9x13-inch glass baking pan. Cover with aluminum foil.
  • Bake in the preheated oven until potatoes are soft, about 30 minutes.

I found this in a cooking magazine and made it as instructed. I've since changed a few of the ingredient amounts to give it less of a vinegar taste and add some sweetness. Hopefully it works! I will update next time I make it if I decide to change anything else.

1 (19 ounce) package frozen garden mixed vegetables (or whatever veggie mix you want to use)
1/3 cup chopped onion
1 tablespoon canola oil

1 tablespoon apple cider vinegar (original recipe calls for 1/4 cup)
1 tablespoon Worcestershire sauce

2 bell peppers
1 sweet potato, peeled
⅓ to ½ head of cauliflower
1 teaspoon kosher salt
Fresh black pepper
½ teaspoon each: Garlic powder, smoked paprika, dried oregano, dried basil, ground cumin
2-3 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper. Set aside.
  • Cut sausage and vegetables into relatively uniformly-sized pieces - about ½ to 1 inch. Cut harder vegetables such as potatoes and cauliflower into slightly smaller pieces, and faster-cooking vegetables into larger pieces - the goal is to have everything done at around the same time.
  • Place all vegetables and the sausage into a large zip-top bag or a large bowl and toss with the olive oil, salt, pepper and spices to coat. Spread evenly onto the prepared baking sheet and roast for 30-40 minutes, stirring halfway through, until vegetables are cooked and sausage is browned. Serve topped with fresh parmesan cheese, if desired.
