My sister Amy came up with this recipe that makes standard chicken breasts a lot more exciting. My husband and I just love the wonderful sauce. -Molly Cappone, Lewis Center, Ohio

Number Of Ingredients 11

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1 tablespoon canola oil
2 medium onions, chopped
1/2 cup reduced-sodium chicken broth
2 jalapeno peppers, seeded and minced
2 teaspoons ground cumin
3 ounces reduced-fat cream cheese, cubed
1/4 cup reduced-fat sour cream
3 plum tomatoes, seeded and chopped
2 cups hot cooked rice

Steps:

  • Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 165°, 5-7 minutes. Remove chicken and keep warm., Stir cream cheese and sour cream into onion mixture until blended. Stir in tomatoes; heat through. Serve with chicken and rice.

Given to me by a friend who loves to experiment with recipes. A little kick of Southwestern cooking. Not too spicy, but can be made so with a little bit more jalapeno or other spices for an extra bit of 'kick.'

2 teaspoons ground cinnamon
2 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
1 whole chicken, cut into pieces
1 cup chicken broth
2 tablespoons honey
2 limes, juiced
½ jalapeno pepper, minced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
  • In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
  • Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

1 (8 ounce) package cream cheese, at room temperature1/2 cup grated Mexican cheese blend4 slices cooked and crisped bacon (chopped)1/3 cup minded jalapeños (plus additional sliced jalapeño for garnish, if desired)4 boneless, skinless chicken breasts1/3 cup all-purpose flour1/2 teaspoon salt1/4 teaspoon freshly ground black pepper1 cup panko breadcrumbs1 teaspoon taco seasoning mix2 eggs

Steps:

  • Gather the ingredients. Preheat oven to 375 F and cover a baking sheet with nonstick foil. Set aside.
  • In a large bowl, combine cream cheese, Mexican cheese blend, chopped bacon, and minced jalapeño.
  • Using a sharp knife, cut chicken breasts horizontally until almost butterflied (creating a pocket in the center), then scoop 1/4 cup cream cheese jalapeño mixture into the center of each chicken breast.
  • If necessary, use a toothpick to keep filling in.
  • In a shallow bowl combine the flour, salt, and pepper.
  • Beat the eggs and place in a second shallow bowl.
  • In a third shallow bowl, combine the panko breadcrumbs with the taco seasoning.
  • Dredge each stuffed chicken breast in the flour mixture, shaking off the excess.
  • Then, dip each chicken breast in the beaten egg.
  • Finally, coat the chicken breast with the breadcrumb mixture. Press to adhere.
  • Place the coated chicken breasts onto the prepared baking sheet.
  • Place baking sheet in oven and bake until chicken is cooked through, about 30 minutes. Enjoy!

1 pound chicken breasts, boneless skinless ,cut into 1-inch cubes
1/4 cup cornstarch
4 cups vegetable oil + 2 teaspoons vegetable oil
1/2 teaspoon garlic, chopped
1 teaspoon rice wine
2 tablespoons soy sauce
2 jalapeno peppers, sliced
2 tablespoons sugar

Steps:

  • In a Zip-lock sealable plastic bag combine the chicken and cornstarch shake well until the chicken is evenly coated. Allow to stand for at least 5 minutes. Heat 4 cups of vegetable oil in a deep fryer to 375°F. Add the chicken and fry in batches until the chicken is crispy and fully cooked (internal temperature is 165°F). Drain on paper towels. Heat 2 teaspoons of vegetable oil in a wok or large skillet. Add jalapenos and stir-fry for 1 minute. Remove from the wok and set aside. Add chopped garlic, rice wine, soy sauce, jalapenos, and the chicken to the wok. Stir-fry for about a minute. Add the sugar and cook until the sauce has thickened and the mixture is heated through.

Pretty tasty if you like jalapenos! I like to make this dish for picnics or potluck dinners and serve cold or room temperature. The cook time listed depends on how much chicken you have and how hot your oil is. I put 30 minutes because that is about how long it takes me.
