SMOKED TOMATOES

Smoked Tomatoes image

Provided by Food Network Kitchen

Time 2h10m

Yield 6 servings

Number Of Ingredients 3

8 plum tomatoes (about 2 pounds), halved and seeded
Kosher salt and freshly ground pepper
4 sprigs rosemary or thyme

Steps:

  • Soak the wood chips in water 1 hour, then prepare your grill for smoking.
  • Season the tomatoes with salt and pepper. Divide the herbs between the disposable pie pans, then add the tomatoes, cut-side down.
  • Once the grill reaches 250 degrees F, place the pans with the tomatoes on the cooler side of the grill. Close the grill and let smoke until the tomatoes are tender, 30 to 40 minutes. If using a gas grill, turn off the flame and let the tomatoes sit 10 more minutes (this is not necessary if using charcoal; it imparts more smoky flavor). Remove from the grill and serve hot or at room temperature.

SMOKED CHERRY TOMATO RAISINS, A FLAVORFUL ADDITION TO ...
2019-10-20 Smoked Tomato Raisins are the single best thing you can do with cherry tomatoes and here is the recipe for creating them. They are superb for snacking, on salads, on a pizza, in pasta, baked into breads, stuffed into chicken breasts or pork chops, or anything you would do with raisins or sun dried tomatoes.

  • Prep. Pop the stems off the tomatoes and stab them 3 to four times with the tip of a sharp knife so moisture can escape.
  • Fire up. Set the temp for a smoker or the indirect zone of a grill to about 200 to 225°F. Don’t get much hotter than this. Spread the tomatoes around on the cooking surface, trying to leave a little room between them. Throw wood on the fire to get some smoke rolling. Every 60 minutes throw on some more smoke wood. And after 3 hours roll them around a bit. When they have shrunk to about 25% of their original size, darkened, but before they start to get hard and are pliable like raisins, they are done. If you plan to keep them for more than a few days, throw them in the fridge. I make bags full and freeze them for use year-round.
