This chicken and smoked sausage jambalaya recipe is an easy way to make a Cajun classic at home. It has all the flavors of your favorite dish with just a few simple ingredients that you probably already have on hand.

2 Tablespoons olive oil, divided
1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
1 onion, chopped
1 green bell pepper, chopped
2 stalks celery, diced
3 teaspoon garlic, minced
1 28 ounces. can crushed tomatoes
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon dried thyme
14 ounces kielbasa, cut in half lengthwise and then sliced (half moon shapes)
1 1/4 cups uncooked white rice
2 1/2 cups of chicken broth
green onions for topping/garnish (optional)

Steps:

  • Heat 1 Tablespoon oil in a large skillet or large Dutch oven over medium-high heat. Add chicken and cook until pieces are lightly browned on all sides but not cooked through. Remove and set aside.
  • Add 1 Tablespoon oil to the same pot, if needed. Add onion, green pepper, , celery and garlic and cook until tender.
  • Add crushed tomatoes, cayenne, black pepper, salt, thyme, kielbasa, and chicken back into the pot. Cook for 10 minutes, stirring occasionally.
  • Add the rice and broth. Bring to a boil, then reduce heat to low and cover. Cook on low heat for 25 minutes or until liquid is absorbed and rice is cooked through.

This is an easy recipe that has never let me down. I sometimes use shrimp instead of chicken, which is another tasty option. Just be sure to add the shrimp near the end of cooking time so it doesn't overcook. You might want to start with less than the recommended 1/8 teaspoon cayenne if you are very sensitive to it.

10 ounces frozen okra
1/2 lb hot Italian sausage or 1/2 lb hot smoked turkey sausage
1 onion, chopped
1 celery rib, chopped
2 cloves garlic, minced
1 lb boneless skinless chicken breast
1 teaspoon oil
1 (16 ounce) can whole tomatoes
1 cup rice
1 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper
1 teaspoon oregano
1/2 teaspoon thyme
1 1/2 cups chicken stock

Steps:

  • Thaw the okra and slice the sausage into 1/2-inch slices.
  • Cut chicken into bite-size pieces.
  • Heat oil in a large Dutch oven.
  • Add the sausage and cook over medium heat for 5 minutes.
  • Add the chicken, sear both sides, and remove.
  • Add the onion and the celery to the pan and cook until softened, about 5 minutes.
  • Add the garlic and cook 1 minute.
  • Drain the tomatoes, reserving the liquid, and add to the pan.
  • Break up the tomatoes with a fork or your cooking spoon.
  • Stir in the rice, black pepper, cayenne, oregano, and thyme.
  • Measure the reserved tomato juice and enough chicken stock to equal 2 cups liquid and add to the pan along with the chicken.
  • Bring the mixture to a boil over medium-high heat.
  • Lower heat, cover and simmer 10 minutes.
  • Add thawed okra, recover and cook until the rice is tender, about ten minutes.

2 tablespoons olive oil
1 1/2 pounds boneless skinless chicken thighs
Kosher salt and freshly ground black pepper
1 pound smoked sausage, sliced into circles
1 large Vidalia onion, chopped
1 green bell pepper, chopped
2 ribs celery, chopped
4 cloves garlic, chopped
1 tablespoon chopped thyme
2 cups long grain white rice
2 tablespoons tomato paste
1 (14-ounce) can fire-roasted diced tomatoes
2 1/2 cups chicken broth
1 dried bay leaf
1/4 cup thinly sliced green onions
3 tablespoons chopped fresh parsley

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat.
  • Season the chicken with salt and pepper. Add chicken to the Dutch oven and brown on each side, about 8 minutes total. Remove to a plate and reserve.
  • Add sausage, onion, bell pepper, celery, garlic, and thyme and saute until translucent and sausage is browned, about 8 minutes.
  • Stir in rice, tomato paste, diced tomatoes, broth, bay leaf, and reserved chicken, and bring to a boil, then reduce to a simmer, and cook on low, covered, for 20 minutes.
  • Turn off heat and let rice stand, covered, 5 minutes. Remove bay leaf. Fluff rice with fork and stir in green onions and parsley.

1 small onion, chopped
1 small green pepper, chopped

1 garlic clove, minced
1-1/2 cups water
1/2 cup uncooked long grain rice
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon hot pepper sauce
1 can (14-1/2 ounces) diced tomatoes with green chilies, undrained
1/4 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a large saucepan, saute the sausage, onion and green pepper in oil until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the water, rice, salt, cayenne and hot pepper sauce. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until rice is tender. Add tomatoes and shrimp; cook and stir until shrimp turn pink.

2 cups chopped onions
1 cup fine chopped parsley
2 lbs smoked sausage
8 cups chicken stock
salt
1/2 cup vegetable oil
1/2 cup chopped bell pepper
1 cup fine chopped green onion
3 cups long grain rice
1 tablespoon chopped garlic
cayenne pepper

Steps:

  • Cut chicken into 2 inch pieces.
  • ,rinsed, and dried.
  • Set aside.
  • Slice smoked sausage into 1/4 inch pieces.
  • In a heavy, high-walled skillet over med.
  • heat, brown the chicken in the oil, stirring the meat around so it won't stick.
  • After the chicken has browned, remove from pot.
  • Then add onions, bell pepper, parsley, and green onions, and saute until the onions are clear.
  • Stir in the sausage, rice, stock, garlic, chicken, salt, and pepper.
  • Continue cooking until nearly all the water has boiled out, then reduce the heat to low, cover, and let simmer until the rice is done, about 1 hr.
  • DO NOT LIFT THE LID FOR AT LEAST 1 HOUR.

2 to 3 teaspoons Cajun or Creole seasoning

2 cups chopped yellow onions
1 cup chopped green bell pepper
1 cup chopped celery
1/8 cup chopped garlic

2 bay leaves
1 lb kielbasa or 1 lb other cooked sausage, cut into 6 to 8-inch segments
2 cooked turkey legs
2 lbs cubed cooked turkey
1 cup chopped tomato, and their juices
1 1/4 cups medium-grain white rice (about 1 1/8 pounds)
8 cups water
1/2 cup chopped green onion
1/4 cup chopped fresh parsley leaves
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon dried thyme

Steps:

  • In a very large roasting pan measuring approximately 21 by 17 by 7 inches with handles on both sides, heat the oil over medium-high heat.
  • Add the onions, bell peppers, celery, garlic, Essence, salt, pepper, cayenne and bay leaves, and cook, stirring, until the vegetables are very soft and starting to turn golden, about 15 minutes.
  • Add the sausages and cook, stirring, until they start to brown on the outside, about 7 minutes.
  • Add the turkey legs and meat and stir well.
  • Add the tomatoes and their juices and cook, stirring, for 5 minutes.
  • Add the rice and stir well to incorporate and coat evenly.
  • Add the water, stir well to combine, and bring to a boil.
  • Reduce the heat, cover tightly, and cook without stirring until the liquid is absorbed and the rice is tender, 35 to 40 minutes, adding more water as needed if the liquid is all absorbed before the rice is tender.
  • Remove from the heat and let sit for 15 minutes before serving.
  • Remove the bay leaves. Stir in the green onions and parsley, and serve hot.
