Quick, Smoky Green Beans image

Instead of using smoked pork fat, try this other smoky ingredient - smoked salt - for a healthier version of green beans.

2 tablespoons olive oil
1 tablespoon sesame seeds
½ (16 ounce) package frozen green beans, defrosted
1 tablespoon bacon bits
½ teaspoon hickory smoked salt, or to taste
1 pinch garlic powder, or to taste

Steps:

  • Heat oil in a pan over medium heat until shimmering. Add sesame seeds and cook for 1 minute; watch carefully as seeds burn quickly. Add green beans, bacon bits, smoked salt, and garlic powder. Cook and stir until beans are hot, about 3 minutes.

Green Beans with Smokey Bacon Vinaigrette image

Sweet bacon vinaigrette lovingly caressing green beans. Discovered this combination during Thanksgiving dinner when a bottle of bacon vinaigrette was dropped onto my plate. The result was delicious. I like to add a bit of Cheddar. Bacon, green beans, and Cheddar just goes really well together for me.

2 pounds fresh green beans, trimmed
½ pound smoked bacon, cut into 1/2-inch pieces
1 yellow onion, sliced thin
⅓ cup red wine vinegar
1 tablespoon white sugar
¼ cup chopped fresh flat-leaf parsley

Steps:

  • Make an ice bath by filling a large pot with ice and water; set aside.
  • Bring a pot of lightly salted water to a boil. Cook the green beans in the boiling water until slightly tender yet crisp, about 3 minutes; drain. Immediately plunge the green beans into the ice bath to stop them from cooking further. Drain and set aside.
  • Cook the bacon in a large, deep skillet over medium-high heat until it begins to brown, about 5 minutes. Add the onions to the bacon and continue cooking until the onions begin to caramelize and turn golden brown, 7 to 10 minutes. Add the green beans, red wine vinegar, and sugar; cook and stir until the sugar is dissolved, 2 to 3 minutes.

These smoked green beans pair perfectly with so many smoker recipes like smoked turkey, smoked brisket, smoked meatloaf, etc.

24 oz fresh green beans, ends trimmed
8 tbsp butter, melted
salt ground black pepper, to taste

Steps:

  • Add the beans to the tray of a lipped pan, in an even layer. Drizzle the melted butter evenly out over the top, and using a pair of tongs gently toss the beans with the butter until well coated.
  • Season the beans evenly, and liberally, with salt & pepper.
  • Preheat the pellet smoker to 275 degrees F. Add the beans, and smoke 3-4 hours, tossing them every 30 minutes- or until tender shriveled, and slightly browned in places.

The classic French dish of green beans and almonds gets a fun update with the addition of corn, which lends extra sweetness, chewy texture and pops of golden color. The simply prepared dish allows the tender green beans and corn to shine in a velvety garlic- and thyme-infused butter sauce. The nutty flavor and delicate crunch of toasted sliced almonds round out the dish. (Haricots verts also work beautifully here, in place of the green beans, but decrease the steaming time to 3 minutes.) This quick and versatile salad pairs well with many different foods and can be enjoyed warm or at room temperature.

1/2 cup sliced almonds (2 ounces)
2 tablespoons extra-virgin olive oil
2 garlic cloves, minced
1 1/2 pounds green beans, trimmed
5 thyme sprigs
Salt and black pepper
3 tablespoons unsalted butter
2 cups fresh corn kernels (from 2 to 3 ears), or use thawed from frozen

Steps:

  • Heat oven to 350 degrees. Spread almonds on a baking sheet and bake until golden, 6 to 7 minutes.
  • Meanwhile, in a large (12-inch) deep skillet with a lid, heat oil over medium. Add garlic and stir until fragrant, 30 seconds. Add green beans and thyme, season with salt and pepper, and toss to evenly coat in the oil. Add 1/2 cup of water, cover and steam until beans are softened, about 5 minutes. Stir in butter and corn, and cook, stirring occasionally, until corn and green beans are tender and glazed in the sauce, 4 to 5 minutes. Discard the thyme sprigs, and season with salt and pepper.
  • Transfer beans and corn to a large platter and spoon over any remaining sauce. Garnish with the toasted almonds and more black pepper.
