1-1/4 lb. sweet potatoes (about 3), cut into spears
2 Tbsp. honey

Steps:

  • Heat oven to 400ºF.
  • Place chicken, skin-sides up, in 15x10x1-inch pan. Add potatoes.
  • Bake 1 hour or until chicken is done (165ºF) and potatoes are tender, brushing chicken occasionally with combined steak sauce and honey for the last 15 min.

½ cup apple jelly
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon ground cinnamon
½ teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
  • Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

HONEY GLAZED "DUMP" CHICKEN

Another great OAMC recipe! For "honey BBQ chicken" add 1/2 cup of your favourite BBQ sauce and make as directed.

1/4 cup butter, Melted
1/8 cup soy sauce
1/2 cup honey
1 1/2 lbs chicken pieces (breasts, thighs, or wings)

Steps:

  • For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
  • To thaw and cook: Take the bag out of the freezer the night before, make sure the bag is sealed completely.
  • For the oven: Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For the crockpot: cook on low for 6-8 hours or on high for 4-6 or until done.
  • On the grill: cook over medium heat until juices run clear. Be sure to watch carefullly or these will burn!

2 tablespoons soy sauce
⅛ teaspoon red pepper flakes
1 ½ tablespoons olive oil
2 skinless, boneless chicken breast halves, cut into bite-size pieces

Steps:

  • Whisk honey, soy sauce, and red pepper flakes in a bowl.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes. Pour honey mixture into skillet and continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.

I made this up as a special at a restaurant I used to work at. It was a pretty good seller. I made it for my husband the other night and he loved it too.

1 roasting chicken
3 garlic cloves, chopped
1/2 cup butter
1/3 cup honey
2 tablespoons liquid smoke
1 teaspoon crushed red pepper flakes
salt and pepper

Steps:

  • Cut chicken in half removing back bone. You will be working with two half chickens.
  • Cut three TBSP of butter off the stick and cut those into a small dice.
  • Pull back skin on chicken and rub the meat with salt, pepper, and the chopped garlic. Put the diced butter evenly under the skin and put the skin back in place. Season the top of the skin with salt and pepper.
  • In a small sauce pan melt the remaining butter, honey, liquid smoke and red pepper.
  • Place chicken in a roasting pan and pour half the butter mixture over the top.
  • Roast at 375°F for 20 minutes then pour the rest of the butter mixture over the chicken.
  • Continue cooking for about 30 more minutes, basting with the pan juices every 10 minutes.
  • Make sure the chicken thigh has reached 180°F before removing the chicken from the oven.
