This was given to my mom by her best friend who is a southern girl at heart. It is a sweet and savory flavor that you never forget. Try it with a grilled cheese or on scrambled eggs...you can put it on anything!

½ pound smoked bacon
2 pounds ripe tomatoes, chopped
1 yellow sweet onion, finely diced
1 cup white sugar
2 ½ tablespoons apple cider vinegar
1 ½ teaspoons salt
¼ teaspoon black pepper
1 dash hot pepper sauce (such as Tabasco®)

Steps:

  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
  • Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about 1 hour. Adjust salt and black pepper.
  • Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.

400g spaghetti
1 tbsp olive oil
120g smoked streaky bacon, sliced into matchsticks
1 onion, finely chopped
1 garlic clove, finely chopped
2 tsp sweet smoked paprika
2 x 400g cans chopped tomatoes
grated parmesan, to serve (optional)

Steps:

  • Bring a large pan of water to the boil and cook the spaghetti following pack instructions. Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon for 3-4 mins until just starting to crisp. Stir in the onion and cook for another 3-4 mins, then add the garlic and smoked paprika, and cook for 1 min more.
  • Pour in the chopped tomatoes, bring to the boil and bubble for about 5 mins until thickened, stirring every so often to stop it catching on the bottom. Drain the pasta and toss with the sauce. Serve with Parmesan, if you like.

  • In a bowl, beat cream cheese, mustard and celery seed until blended. Stir in tomato and green pepper. Cover and refrigerate for at least 1 hour. I have made many variations of this over the years, only not with pasta sauce before. This recipe has evolved from a recipe I found on AR for tomato gravy. I have discovered that using the pasta sauce as the base instead of using tomato sauce and canned tomatoes makes this much less time consuming too.

Steps:

  • In a large heavy skillet cook the bacon over moderate heat, stirring, until it is crisp, transfer it to paper towels to drain, and chop it fine. In a bowl stir together the bacon, the mayonnaise, and the mustard. Spread the bacon mayonnaise on one side of each bread slice, sandwich the tomatoes between the slices, and cut each sandwich into 4 triangles.
