1 lb crab claw meat
2 celery ribs, chopped
1 medium onion, finely chopped
1 cup mayonnaise

Steps:

  • Mix all ingredients together and put into crab shells (whatever type you are using).
  • Dot each with butter.
  • Bake at 350 until hot, bubbly, and golden brown.

3 tablespoons butter, melted
24 fresh mushrooms
2 tablespoons butter
2 tablespoons minced green onions
1 teaspoon lemon juice
1 cup diced cooked crabmeat
½ cup soft bread crumbs
1 egg, beaten
½ teaspoon dried dill weed
¾ cup shredded Monterey Jack cheese, divided
¼ cup dry white wine

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter.
  • Remove stems from mushrooms. Set aside caps. Finely chop stems.
  • Melt 2 tablespoons butter in a medium saucepan over medium heat. Stir in the chopped stems and green onions and cook until soft, about 3 minutes. Remove saucepan from heat. Stir in lemon juice, crabmeat, soft bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese. Thoroughly blend the mixture.
  • Place mushroom caps in the buttered pan, and stir until caps are coated with the butter. Arrange caps cavity side up, and stuff cavities generously with the green onion and crabmeat mixture. Top with remaining Monterey Jack cheese. Pour wine into the pan around the mushrooms.
  • Bake uncovered in the preheated oven 15 to 20 minutes, until cheese is melted and lightly browned. Serve warm.

This tasty appetizer seasoned with thyme, oregano, and savory. Choose good sized mushrooms, about 2 inches across. When cleaning mushrooms, don't run them under water. They are like little sponges, and will absorb it; just wipe them clean with a damp towel. The filling can be made with fresh, canned, or imitation crabmeat. If using canned, be sure to rinse it first.

1 pound fresh mushrooms
7 ounces crabmeat
5 green onions, thinly sliced
¼ teaspoon dried thyme
¼ teaspoon dried oregano
¼ teaspoon ground savory
ground black pepper to taste
¼ cup grated Parmesan cheese
⅓ cup mayonnaise
3 tablespoons grated Parmesan cheese
¼ teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine crabmeat, green onions, herbs, and pepper. Mix in mayonnaise and 1/4 cup Parmesan cheese until well combined. Refrigerate filling until ready for use.
  • Wipe the mushrooms clean with a damp towel. Remove stems. Spoon out the gills and the base of the stem, making deep cups. Discard gills and stems. Fill the mushroom caps with rounded teaspoonfuls of filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Parmesan and paprika.
  • Bake for 15 minutes. Remove from oven, and serve immediately

1 lb white crabmeat
6 slices stale bread or 4 stale hamburger buns
1/4 lb butter
3 eggs
1/2 cup chopped green onion
1/2 cup bell pepper, chopped
2 cloves garlic, minced
salt
pepper
cayenne
1 cup evaporated milk
1/2 teaspoon Worcestershire sauce
1 cup chopped onion
1/2 cup chopped celery
seasoned bread crumbs, for topping

Steps:

  • Soak buns in milk and egg mixture.
  • Saute celery, onions (not green), garlic and bell pepper in a heavy pot in the butter until wilted.
  • Add worcestershire sauce, crabmeat and season to taste with salt, pepper and cayenne.
  • Cook over medium heat about 15 minutes, stirring constantly.
  • Add green onions.
  • Then add buns.
  • Mix well.
  • Stuff crab shells (artificial).
  • Sprinkle tops with bread crumbs and bake at 375 for 10 minutes or until brown.

6 tablespoons unsalted butter
1 small red onion, diced
1/2 cup diced yellow pepper
1/2 cup small diced fennel
1 clove garlic, chopped
Kosher salt
Freshly ground black pepper
4 cups fresh bread crumbs
2 Dungeness crabs, poached (see note), meat removed, shells, washed, and trimmed
1/2 cup mayonnaise
1 lemon, zested and juiced
2 tablespoons chopped tarragon
1/4 cup chopped parsley
4 scallions, chopped

Steps:

  • In a skillet over low heat melt the butter, add the onion, yellow pepper, fennel, and garlic.
  • Season with salt and pepper. Cook slowly for about 6 minutes until all are tender, transfer mixture to a bowl, add bread crumbs, and allow to cool.
  • Preheat oven to 375 degrees F.
  • When cooled add crab meat, mayonnaise, lemon zest, lemon juice, tarragon, parsley, scallions, and season with salt and pepper, to taste. Mix the ingredients well and stuff the shells. Bake for 25 minutes until warmed through.
  • Note: the crabs should be poached in a court boullion made with 2 quarts water, 1 chopped carrot, 1 chopped yellow onion, and 1 chopped celery stalk boiled with 1/2 teaspoon each black peppercorns and coriander seeds. Bring the mixture to a boil and after 10 minutes, add 1 lemon, thinly sliced. Let boil for 10 more minutes, salt the water, and poach the crabs.

1 hot green chili, finely chopped, seeds optional, or use dried red pepper flakes to taste
1 tablespoon curry powder
3/4 to 1 pound crabmeat, finely shredded (This does not have to be lump or fancy crab. Show crab, flaked crabmeat or even canned crab may be used.)
2 tablespoons finely chopped fresh coriander leaves, optional
2 tablespoons finely chopped parsley
Salt and freshly ground pepper
6 to 8 tablespoons crab liquid or bottled clam juice
2 cups fresh bread crumbs
Lime wedges for garnish

Steps:

  • Preheat the oven to 400 degrees.
  • Melt 8 tablespoons butter in a wide, shallow saucepan or skillet. When melted, add the scallions, garlic and chili. Add the curry powder and blend. Add the crabmeat. Add the coriander leaves, if desired, and parsley. Add salt and pepper to taste. Add enough crab liquid to moisten properly. If you want a richer and better dish, add 2 to 4 more tablespoons butter. Add bread crumbs and blend well.
  • Remove from the heat and use the mixture to fill 4 to 8 clam shells.
  • Bake for 10 to 15 minutes, until nicely brown. Serve with lime wedges, slices or halves.

1 (16 ounce) package cremini mushrooms
2 (8 ounce) packages cream cheese, softened
2 cups shredded Colby-Jack cheese, divided
1 bunch green onions, thinly sliced
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon Creole seasoning (such as Tony Chachere's®)
½ teaspoon garlic powder
1 pound fresh crabmeat
½ cup Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan with butter.
  • Wash mushrooms and remove stems. Scrape out mushroom caps to make an ample "bowl" for the filling.
  • Mix cream cheese, 1 cup Colby-Jack cheese, green onions, seafood seasoning, Creole seasoning, and garlic powder together until thoroughly combined. Crumble in crabmeat, making sure there are no large chunks so the consistency works well for stuffing. Mix in bread crumbs.

1 pound lump crab meat
1 pound shrimp, ground
1/2 cup dry white wine
3 ounces diced pimentos
1/2 pound chopped mushrooms
1/2 teaspoon cayenne
1/4 teaspoon white pepper
Salt to taste
2 1/4 cups stale bread crumbs
10 jumbo soft-shell crabs, gills removed
3 egg yolks, lightly beaten
Flour for dredging seasoned with salt, red and white pepper
1 1/2 cups buttermilk
2 beaten eggs
Cracker meal
1 quart peanut oil
Lemon wedges and fried parsley for garnish

Steps:

  • Cook green onions, garlic, crab and shrimp in white wine about three minutes. Add pimentos, mushrooms, cayenne, white pepper and salt and bread crumbs and cook a minute or two longer. Stir in yolks.
  • Chill stuffing for about 1 hour, until firm. Carefully stuff each side cavity of crabs with mixture.
  • Season crabs with salt, white pepper and cayenne. Dredge in flour; dip in a mixture of buttermilk and eggs, then in cracker meal, breading each leg individually.
  • Heat oil in deep pot to 375 degrees. Deep fry a few crabs at a time until golden brown on both sides.
  • Serve crabs with Creolaise sauce. Garnish with lemon and fried parsley.

1 tablespoon butter, softened, plus 7 tablespoons butter cut into 1/2 -inch cubes
2 cups plus 2 tablespoons soft crumbs from a baguette or similar bread, pulverized in a blender
1/4 cup fish stock or clam broth
1/4 cup finely chopped onion
* pound fresh or frozen crab meat, drained
1/2 cup finely chopped scallions
2 tablespoons finely chopped flat-leaf parsley
1/2 teaspoon cayenne
1/2 teaspoon salt

Steps:

  • Heat oven to 400 degrees. Spread the softened butter over the bottoms of 6 medium-size natural or ceramic crab or scallop shells. In a large bowl, mix 2 cups of the bread crumbs with the fish stock and set aside.
  • In a heavy, 10-inch skillet, melt 4 tablespoons of the butter cubes over moderate heat. Add the onions and cook, stirring often, until they are translucent, about 5 minutes. Transfer the onion mixture to the bowl of moistened bread crumbs. Add the crab meat, scallions, parsley, cayenne and salt, and mix well.
  • Mound the crabmeat mixture into the buttered shells. Sprinkle the remaining 2 tablespoons of bread crumbs and remaining 3 tablespoons of butter cubes over the tops and lay the shells on a large, shallow baking dish. Bake in the upper third of the oven for 15 minutes, then put under the broiler for 30 seconds or so to brown the tops. Serve hot in the shells.
