Here's what you need: Kraft® Macaroni and Cheese Blue Box Original, unsalted butter, milk, Oscar Mayer® Bacon, chipotle sauce, Kraft® Shredded Cheddar Cheese, smoked paprika

Steps:
- Bring 6 cups (1.5 liter) of water to a boil in a medium saucepan over medium-high heat. Stir in the macaroni and cook for 7-8 minutes, or until tender, stirring occasionally.
- Drain the macaroni in a colander (do not rinse), then return to the pot over low heat. Add the butter, milk, and cheese sauce mix and stir well until creamy. Remove the pot from the heat.
- Chop 4 slices of Oscar Mayer® Bacon and stir into the mac and cheese, along with the chipotle sauce and Kraft® Shredded Cheddar Cheese. Mix until well combined and the cheese is melted.
- Transfer the mac and cheese to a serving bowl, then sprinkle the smoked paprika and crumble the remaining 2 strips of bacon on top. Serve warm.

- Preheat the oven to 400 degrees F (200 degrees C). Line a pizza pan with aluminum foil; lay bacon strips on top.
- Bake bacon in the preheated oven until browned and crisp, about 15 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- Drain bacon slices on paper towels and allow to cool slightly, about 5 minutes. Place in the bowl of a food processor; pulse until crumbly.
- Preheat a smoker to 275 to 300 degrees F (135 to 150 degrees C). Add wood chips according to manufacturer's directions.
- Mix together cream, Cheddar cheese, Colby-Jack cheese, sour cream, mayonnaise, butter, and barbeque rub in the warm pasta pot; add drained macaroni. Mix well and let the cheese melt. Pour into a 9x13-inch aluminum pan and sprinkle bacon on top.
- Place the pan on the rack in the preheated smoker. Cook until cheese is bubbly, about 3 1/2 hours.

I took my All-American Macaroni and Cheese recipe and turned the amplifier up to 11. Smoked mozzarella gives this dish just the right amount of smoky flavor and luscious, gooey-stretchy cheese texture. The addition of smoky, crumbled bacon is a bonus as well as a hint of sweetness from caramelizing the onions. My family thoroughly enjoyed this version of mac-n-cheese. It is definitely a fantastic once-in-a-while treat well worth every cheesy calorie.

- Preheat oven to 350°F.
- While making cheese mixture, cook macaroni per package instructions. Drain and set aside.
- Bring a skillet to medium heat. Add bacon and fry both sides until crisp. Drain on a paper towel and crumble. Set aside.
- In a medium saucepan over medium heat, melt butter. Cook onion and garlic in butter until lightly caramelized (light brown but not crisp). Add flour to saucepan and stir to combine, leaving no dry flour bits. Add milk all at once to saucepan along with black pepper. Stir constantly until mixture begins to thicken. Stir in cheddar cheese first (one cup at a time) until melted. Then stir in mozzarella until mixture is smooth.
- Place cooked macaroni in a 2-quart casserole dish. Stir in cheese mixture and half of the bacon until evenly distributed. Then sprinkle the top with the remaining bacon.
- Bake for 30 minutes or until top is lightly browned.
- Cool, serve and enjoy!

CREAMY STOVETOP BACON MAC AND CHEESE

- In a pot of boiling salted water, cook the pasta until al dente; drain.
- Set an extra-large skillet, or a large heavy saucepan, over medium-low heat and cook the bacon until crispy and the fat renders out, 10 to 12 minutes. Set the bacon aside, reserving the fat to build your sauce. At this point you should have about 1/4 cup of reserved fat. If needed, add some olive oil or butter to make sure you have a 1/4 cup of fat in the pan.
- Add the flour and cook, whisking constantly, until the paste bubbles a bit, about 2 minutes (make sure it doesn't brown). Continuing to whisk, add 3 cups of the hot milk and cook until the sauce thickens, about 5 minutes. Season with salt and pepper. Bring the sauce to a boil, reduce the heat to low and cook for 2 to 3 more minutes. Stir in the dry mustard, and then gradually add the Cheddar and Muenster cheeses, stirring constantly until all of the cheese has melted into the sauce. Stir in the hot sauce and the remaining 1 cup milk. Add the cooked pasta to the sauce and stir to coat. Stir in the crispy bacon and season with salt and pepper.
MAC AND CHEESE WITH APPLEWOOD SMOKED BACON
This is your basic mac and cheese recipe, with a couple simple additions that I think made it one of the best I've tried/made (and I've tried/made a lot).

Steps:
- Cook bacon and set aside on paper towels to drain.
- Cook noodles, al dente, drain and set aside.
- For sauce: melt 3-4 tablesppons butter and whisk in equal amount of flour to form a paste.
- Add the half cup or so of pureed, or finely chopped, onion and stir for minute or so to cook the onion.
- Add the heavy cream and milk.
- Cook until smooth.
- Add the cheese, cubed or grated is fine, cook until melted and smooth.
- Season with salt, pepper, and CAYENNE to taste.
- Combine the sauce with drained noodles and stir in frozen peas.
- Pour into baking dish and top with crushed mixture of chips and panko crumbs.
- Cook for about 20 minutes at 400 and then top with a few pats of butter and continue cooking til bubbly and brown.
- Enjoy!
SMOKY BACON MAC

- Cook the pasta in salted boiling water until a little less than al dente. Drain, rinse with cold water, and drain the pasta again.
- Cook the bacon in a frying pan over high heat until crispy, about 8 minutes. Remove extra grease by patting the strips with a paper towel, and then cut into bite-size pieces.
- Add the sauce and both cheeses to a large, heavy-bottomed pot and cook over medium heat. Stir until the cheese is barely melted, about 3 minutes. Add the bacon and stir to combine. Slowly add the cooked pasta, stir, and continue cooking while stirring continuously until the dish is nice and hot, another 5 minutes.
- Spoon into bowls and serve hot.

- 2. Cook pasta according to the package directions, reducing the cooking time by 1 minute. Drain and set aside.
- 3. In a large pan, cook the bacon until crispy. Chop the bacon and set aside. Pour off all but 1/4 cup of the fat in the pan. Heat it over medium-high heat and add the flour, whisking until combined, and then cook for 1 minute. Add half the milk, whisking continuously until thickened, about 5 minutes and then repeat with the other half of the milk. Add the Gouda, pepper jack, and all but 2 tablespoons of the Parmesan and stir until the cheese melts. Stir in the paprika, cayenne, and salt and black pepper to taste.
- 4. Fold in the shells and bacon and transfer to the greased baking dish. Top with the panko, a pinch of salt, a few turns of pepper, and the reserved 2 tablespoons Parmesan. Bake until the top is browned, about 25 minutes. Cool for 5 minutes and enjoy with ketchup, if desired.
