This is hands-down the best way I have found to cook a brisket.

wood chips
¼ cup paprika
¼ cup white sugar
¼ cup ground cumin
¼ cup cayenne pepper
¼ cup brown sugar
¼ cup chili powder
¼ cup garlic powder
¼ cup onion powder
¼ cup kosher salt
¼ cup freshly cracked black pepper
10 pounds beef brisket, or more to taste

Steps:

  • Soak wood chips in a bowl of water, 8 hours to overnight.
  • Mix paprika, white sugar, cumin, cayenne pepper, brown sugar, chili powder, garlic powder, onion powder, salt, and black pepper together in a bowl. Rub the spice mixture over the entire brisket; refrigerate for 24 hours.
  • Preheat smoker to between 220 degrees F (104 degrees C) and 230 degrees F (110 degrees C). Drain wood chips and place in the smoker.
  • Smoke brisket in the preheated smoker until it has an internal temperature of 165 degrees F (74 degrees C), about 12 1/2 hours. Wrap brisket tightly in butcher paper or heavy-duty aluminum foil and return to smoker.
  • Continue smoking brisket until an internal temperature of 185 degrees F (85 degrees C) is reached, about 1 hour more.

1 1/2 cups paprika
3/4 cup sugar
3 tablespoons onion powder
3 tablespoons garlic salt
1 tablespoons celery salt
1 tablespoons black pepper
1 tablespoon lemon pepper
1 teaspoon mustard powder
1 teaspoon cayenne
1/2 teaspoon dried thyme
1 trimmed brisket, about 5 to 6 pounds

Steps:

  • In a bowl combine all the dry ingredients and blend well.
  • Trim the brisket, leaving about 1/4-inch of fat. Season the brisket with about 1/4 cup of the rub (see Cook's Note). Let the brisket marinate overnight in the refrigerator.
  • Preheat your grill to 250 degrees F using charcoal and hickory.
  • Using indirect heat, cook the brisket for 3 1/2 hours and flip. Cook another 3 1/2 hours, cooking for a total of 7 hours. (About 1 1/2 hours per pound.) The brisket should cook to an internal temperature of 185 degrees F.
  • Rest for 10 minutes on a cutting board before slicing. Slice brisket against the grain.

2 to 4 tablespoons liquid smoke
1 teaspoon pepper
1/2 teaspoon salt
1 fresh beef brisket (about 3 pounds)
1/4 cup packed brown sugar
1 teaspoon each celery salt, garlic salt and onion salt
1 teaspoon ground nutmeg
1 teaspoon paprika
1/2 cup barbecue sauce

Steps:

  • In a large resealable plastic bag, combine the liquid smoke, pepper and salt; add the brisket. Seal bag and turn to coat; refrigerate for at least 4 hours or overnight., Drain and discard marinade. Combine the brown sugar, celery salt, garlic salt, onion salt, nutmeg and paprika; rub over meat. Wrap in a large sheet of heavy-duty foil; seal tightly. Place in an ungreased 15x10x1-in. baking pan. Bake at 325° for 4 hours or until meat is tender., Remove brisket to a warm serving platter; skim fat from pan juices. In a saucepan over medium heat, combine 1 cup pan juices with barbecue sauce; cook and stir until thickened. Thinly slice meat across the grain; serve with sauce.

Steps:

  • Make a dry rub by mixing the salt, pepper, garlic and cayenne in a small bowl.
  • Trim the brisket fat and season liberally with the dry rub. Put into a preheated 250 degree smoker and smoke it for 8 to 10 hours. Shift the position of the brisket every 2 hours. Remove when the brisket is tender which is determined by poking it with a toothpick. Transfer to a cutting board and slice. Arrange on a serving platter and serve.

RUB:
2 tablespoons garlic powder

2 cups beef broth

Refrigerate until ready to grill., Soak hickory and mesquite chips or pellets; add to smoker according to manufacturer's directions. Heat to 225°. Uncover brisket. Place brisket in smoker fat side up; smoke 2 hours. Brush generously with mop sauce; turn meat. Smoke 2 more hours; brush generously with mop sauce again. Wrap brisket securely in heavy-duty aluminum foil; smoke until a thermometer inserted in beef reads 190°, 4-5 more hours., Let beef stand 20-30 minutes before slicing; cut diagonally across the grain into thin slices.

1/2 cup sweet paprika
3 tablespoons salt
2 tablespoons freshly ground pepper
1 4-pound piece of brisket
2/3 cup water
1 1/2 tablespoons instant espresso crystals
2 cups ketchup
3/4 cup Worcestershire sauce
8 tablespoons butter
1 medium onion, peeled, pureed
1/4 cup olive oil
4 1/3 cups tomato puree
2 cups water
3/4 cup dark brown sugar
2 bay leaves
2 cubes beef bouillion
3 tablespoons hot sauce, like Tabasco
2 tablespoons chili powder
1 tablespoon cayenne pepper
1 tablespoon lemon juice
3/4 teaspoon freshly ground pepper
1/4 teaspoon salt
1/3 cup cider vinegar

Steps:

  • To prepare the dry mop: Combine dry mop ingredients. Rub all over brisket. Set aside.
  • To prepare the wet mop: Combine wet mop ingredients, except butter, in a small saucepan. Bring it to a boil. Lower heat and simmer for 20 minutes. Remove from the heat and whisk in the butter, set aside.
  • Grill the brisket slowly for 2 hours, basting every 30 minutes with the wet mop.
  • Meanwhile, make the barbecue sauce. Combine olive oil and onions in a saucepan. Saute until translucent, about 5 minutes. Add the remaining ingredients, except for the vinegar, bring it to a boil, lower heat and simmer for 20 minutes. Remove from the heat, stir in the vinegar. Cut the brisket into thin slices and serve with barbecue sauce.
