Mexican Street Corn Deviled Eggs image

Eggland's Best egg yolks are brighter in color and taste creamier than ordinary eggs. They are higher in vitamins and minerals and lower in both cholesterol and saturated fat. One of Ohio's largest crops is corn. Ohio sweet corn is readily available in late summer, but it is also frozen and canned so it can be enjoyed all year round. I used Ohio sweet corn as my inspiration for this delicious recipe using Eggland's Best eggs.

6 large Eggland's Best® Eggs
1/4 cup finely crumbled Cotija cheese
2 tablespoons mayonnaise
2 tablespoons mayonnaise dressing
1/8 teaspoon ground mustard powder
1/8 teaspoon garlic powder
1/8 teaspoon chili powder, + additional for garnish
1/2 tablespoon lime juice
salt to taste
1/4 cup roasted corn (fresh, canned or frozen)
12 cilantro leaves, for garnish

Steps:

  • Place eggs in a saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let them sit 12 minutes. Run under cool water, remove from the shell and pat dry. Cut each egg in half.
  • Place the yolks of the eggs and the Cotija cheese in the bowl of a food processor, fitted with the S-blade. Pulse several times until well-combined. Add the mayonnaise, mayonnaise dressing, mustard powder, garlic powder, 1 /8 teaspoon chili powder, and lime juice to the food processor bowl. Process until smooth and all ingredients are evenly mixed, about 15-20 seconds. Taste the yolks and add additional salt, if desired.
  • Remove the blade from the food processor and stir the roasted corn into the yolks. Place the yolk mixture in a large zip-top plastic bag. Seal the top of the bag, then cut off a small corner.
  • Place the egg whites on a serving platter. Squeeze an even amount of the yolk mixture into each egg white. Sprinkle eggs with additional chili powder, then top each egg with a cilantro leaf.

6 tablespoons unsalted butter
¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place corn, in husks, directly on the oven rack.
  • Roast in the preheated oven until tender and cooked through, 40 to 45 minutes.
  • Peel down husks and rub each ear of corn with 1 tablespoon butter. Sprinkle each with Cotija cheese, cilantro, chili powder, and lime juice. Serve.

8 hard-boiled large eggs
1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/4 cup salsa
2 tablespoons sliced green onions
1 tablespoon sour cream
Salt to taste

Steps:

  • Slice the eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with cheese, mayonnaise, salsa, onions, sour cream and salt. , Stuff or pipe into egg whites. Serve immediately or chill until ready to serve.

2 tablespoons olive oil
2 (16 ounce) packages frozen corn
¼ cup crumbled cotija cheese
¼ cup minced red onion
2 tablespoons finely chopped cilantro
3 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons lime juice
½ teaspoon ground cumin
½ teaspoon smoked sweet paprika
¼ teaspoon chili powder
¼ teaspoon salt
1 pinch ground coriander

Steps:

  • Heat a 14-inch skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the skillet. Spread frozen corn evenly across the skillet; do not stir. Cook corn for approximately 8 minutes.
  • Meanwhile, combine mayonnaise, sour cream, lime juice, cumin, paprika, chili powder, salt, and coriander in a large bowl. Set aside.
  • Check the corn; it should be slightly charred. If not, allow to continue cooking for 4 more minutes (stirring is fine at this point.)
  • Once corn is sufficiently browned/charred, transfer to the bowl with dressing and toss to coat. Add cotija cheese, red onion, and cilantro and mix until well combined. Serve immediately.

I'm not sure where in Mexico this is eaten, but it doesn't matter, it's good! Adapted from Gourmet magazine (2006). I find the cotija cheese in super Walmart (or use feta). Cook time is estimated for cooking of corn.
