THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
CLASSIC SLOPPY JOES
Soft sandwich buns work best with this classic kid-friendly Sloppy Joe recipe-as do chips and pickles. The beef mixture can also be served over pasta.

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
- Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.
SLOPPY JOES
Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- Cook and stir ground beef in a skillet over medium heat until meat is browned and crumbly, about 10 minutes; drain excess grease. Mix ketchup, dried onion, brown sugar, mustard, Worcestershire sauce, smoke flavoring, and garlic into beef, stirring until brown sugar has dissolved.
- Stir beef broth into beef mixture and bring to a boil; reduce heat to low and simmer until thick, about 30 minutes. Season with salt and black pepper.

Smokey but still sloppy! Different flavour than most Sloppy Joes and, in my humble opinion, this one gets "thumbs up"!

Steps:
- In a skillet, heat the drippings or oil and sauté the onions and green pepper over medium heat until onions are translucent.
- Place the onions and peppers in the bottom of a crockpot.
- Add all the other ingredients EXCEPT the cocoa powder and browning/seasoning mix.
- Cook on low for about an hour.
- Stir the mixture and then sprinkle the cocoa powder on top.
- Mash the mixture with a potato masher.
- Stir again.
- Continue cooking on low for another 30 to 40 minutes.
- Taste, and add more liquid smoke and/or other spices to taste.
- Add the browning/seasoning mix and stir thoroughly.
- Continue cooking for another 5 minutes.
- Serve on hamburger rolls or biscuits.
SMOKEY JOES
Sloppy Joes with a hint of chipotle. I made these last night for supper and they were gobbled down so quickly. The original version (a recent Cooking light recipe) called a can of beans and half the meat, but my family prefers it this way. Also, I had to improvise by using Mrs Dash Chipotle blend, which actually worked out very well and I have a new favorite seasoning blend. (The original version called for 1/8 tsp. plain chipotle powder.) The recipe as stated is not very spicy to my tastebuds, so feel free to adjust the heat by adding more chipotle blend and serving hot sauce on the side.

- Heat a large nonstick skillet over medium heat (adding a spray of cooking spray or a drop of olive oil if needed to prevent sticking).
- Brown the beef until no longer pink, draining fat.
- Add onions and garlic and saute along with the drained beef for about 2 minutes, to cook the onions.
- Add cumin, chili powder, and Mrs Dash Chipotle seasoning and cook about 30 seconds.
- Lower heat a bit, add ketchup, canned tomatoes with their liquid and cook about 6 minutes, or until liquid has absorbed.
- Taste for seasonings and add more chipotle blend if you prefer (I like it spicy so I added more).
- Spoon cooked mixture onto buns and top each with a couple of pickle slices and a slice of cheese.
- NOTE: If you are subbing beans for half of the meat,drained them & rinse them and add then when you add the tomatoes.

SMOKY WHITE BEAN AND BEEF SLOPPY JOES
This update on the kid-friendly classic uses half the meat as a traditional sloppy Joe recipe, but retains the qualities that everyone loves: a tart-sweet savoriness and a quick cooking time. You can substitute ground pork, turkey, lamb or plant-based ground meat for the beef; the key is to use a protein that's not too lean. A little fat helps carry the flavor of the meat through the entire dish. (If you use plant-based meat or you only have lean meat on hand, add another tablespoon of olive oil or your preferred fat.) The addition of adobo sauce from a can of chipotles imparts smoke, with just a hint of heat. (If you'd like a spicier version, by all means, chop up one or two of the chipotles and add them.) The leftover chipotles keep for at least two weeks in the fridge or indefinitely in the freezer, and they are a welcome addition to many dishes, like chicken tacos or chili.

- Warm the oil in a large (12-inch) skillet over high heat. Add the onion, season with 1 teaspoon salt, and cook, stirring often, until softened, about 5 minutes.
- Stir in the bell pepper, then spread out the vegetable mixture and let it cook undisturbed for about 1 minute. Stir well and repeat, letting the vegetables cook undisturbed for another minute or so at a time. You want the onions and peppers to get softened, seared and browned in spots, about 5 minutes total.
- Push the vegetables to the sides of the pan, making an empty spot in the middle of the pan, and add the ground beef. Season the beef with a pinch of salt, and smash it flat with a spatula, letting it cook undisturbed for 1 minute until brown underneath. Break up the beef with the spatula and cook 1 to 2 more minutes, until completely browned with no visible pink spots.
- Combine the vegetables and beef, then add the sugar and tomato paste, and cook for 1 minute to toast the tomato paste. Add the garlic powder and cumin, then the tomato purée, adobo sauce and vinegar. Stir in the beans. Reduce the heat to medium and let simmer to thicken slightly, about 3 minutes.
- Meanwhile, toast the buns.
- With a fork, roughly smash some of the beans to thicken the mixture. Taste and add more salt if necessary. Serve on toasted buns, topped with tomatoes and pickles.

- In a stove top pan, heat a couple of drizzles of olive oil. Saute the diced onion and pepper for 3-4 minutes over medium-high heat until translucent, softened and beginning to brown. Add garlic cooking for one minute longer. Season with salt and black pepper to taste.
