SAUSAGE POTATO SOUP WITH KALE
This Sausage Potato Soup with Kale is comforting and made with incredibly flavorful smoked sausage. Make it on the stove or in the slow cooker!

Steps:
- Heat a medum skillet over medium-high heat. Add oil, onion, carrots. celery and sausages and cook until onions are softened and translucent.
- Add garlic, salt, thyme and pepper and cook for 1 minute.
- Add chicken broth and potatoes. Bring to a simmer over medium-high heat, then reduce to medium heat and cover. Simmer for 15-20 minutes, stirring often, until potatoes and carrots are tender.
- Stir in kale and cream and serve with Parmesan if desired.

- In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add the milk, cheese, parsley and sausage. Cook and stir over low heat until cheese is melted and soup is heated through.

This soup is so versatile that it works with whatever you have on hand. If you don't love chickpeas, use cannellini, black or kidney beans. Or, take them out altogether. If you don't like kale add swiss chard or spinach. Feel free to switch up the spices if you prefer something a bit tamer.

- Drizzle olive oil in a large pot over medium heat. Add the diced onion and cook until onions release some moisture, about 5 minutes. Stir in garlic, sweet potato, sausage, and chickpeas. Add paprika, coriander, chipotle powder, cumin, and salt. Cook for another 5 minutes, stirring once or twice.
- Pour stock into the pot and bring to a simmer. Cook until sweet potato has softened, 10 to 15 minutes. Taste for seasoning; add more salt, if needed. Stir in the kale (or spinach) and cook for 1 minute until kale has wilted. Ladle into bowls and top with cheese, if using, and freshly ground pepper.

- Sauté sausage slices in heavy medium saucepan over medium-high heat until beginning to brown, about 3 minutes. Add chicken broth, sliced potatoes and white wine and bring mixture to boil. Reduce heat to medium, cover and simmer until potatoes are almost tender, about 10 minutes.
- Add kale and caraway seeds to soup. Simmer soup uncovered until potatoes and kale are very tender, about 10 minutes longer. Season soup to taste with salt and pepper. Ladle soup into bowls and serve immediately.

- In a 6-qt. stockpot, cook sausage and onion over medium heat until no longer pink, breaking into crumbles, 6-8 minutes. Remove with a slotted spoon., Add kale to pot; cook and stir 2 minutes. Add garlic and, if desired, pepper flakes; cook 1 minute. Add wine; cook 2 minutes longer., Stir in sausage mixture and remaining ingredients. Bring to a boil. - Heat a large stock pot to medium heat. Once hot, drizzle in a few glugs of olive oil. Add carrots and onion and saute for about 3 minutes until they start to soften. Add garlic and saute for about 30 seconds and then push all veggies to one side of the pot. Add sausage and cook for a few minutes to start to brown then mix everything in pot together.
- Add potatoes, broth, salt, pepper, and oregano and stir to combine. Simmer soup until potatoes are soft, about 15 minutes.
- While soup is simmering, prep your kale. Pull or cut the leaves off of the thick stems and discard stems. Hold the kale in a bunch and thinly slice and chop it into small pieces. If you’re using spinach, it isn’t necessary to chop finely since spinach wilts so well. I finely chop the kale since it retains more heartiness in the soup.
- Put cornstarch in a small bowl and whisk in approximately equal amount of evaporated milk. (Totally okay to eyeball here, it doesn’t need to be exact! Just pour a little from your can) Whisk until smooth.
