SMOKY VEGAN CHEDDAR CHEESY DIP OR SAUCE
Made with raw cashews and red bell pepper, this vegan cheddar cheez is an irresistible treat. Used as a dip, sauce, or spread, it packs a flavorful punch.

Steps:
- Combine the cashews with enough hot water to cover in a heatproof bowl. Allow to stand for about an hour.
- Heat the oil in a small skillet. Add the bell pepper and sauté over medium heat until it starts to brown lightly here and there, stirring frequently.
- Combine the soaked cashews, bell pepper, and all the remaining ingredients in a food processor. Process until smooth. Stop the machine and scrape down the sides with a rubber spatula from time to time. It takes a good few minutes to make this smooth.
- To serve: If using as a dip or spread, transfer to an attractive crock or shallow bowl and surround with fresh bread, grilled bread (bruschetta), crackers, and/or raw vegetables. If using as a sauce, toss with hot noodles or dollop onto baked potatoes or hot cooked grains. It's also a great sauce for steamed broccoli and cauliflower.

- In a mixing bowl or liquid measuring cup, soak cashews and carrots in very hot water for 30 minutes (uncovered). Then drain and add to a high-speed blender with 1 cup water, tapioca starch, nutritional yeast, apple cider vinegar, sea salt, garlic powder, and dry mustard (turmeric is optional for deeper color). Blend on high until the mixture is smooth.
- Taste and adjust flavor as needed, adding more apple cider vinegar for acidity, nutritional yeast for cheesiness, garlic powder for depth of flavor, or salt to taste.
- Transfer to a medium saucepan and heat over medium heat. Cook, while whisking, for 1-2 minutes or until thickened to a spreadable consistency (see photo). It should resemble the texture of soft cooked polenta.
- The cheese spread is now ready to use on things like grilled cheese sandwiches, or to add to cooked shells for quick vegan mac ‘n’ cheese (recipes to come!).

- Rinse the almonds well. Place them in water in a medium bowl. Cover and refrigerate overnight.
- Drain the almonds. In the bowl of a food processor, lace the almonds, pimientos, nutritional yeast, salt, garlic powder, and 1/4 cup pimiento liquid. Process until the mixture is well incorporated.
- Remove the lid and test the cheese for texture and salt content. If you want a smoother spread, add more pimiento liquid in small increments and process again. Add more salt if needed.
