Burgers that taste like hamburgers, but without meat! You can replace the Cheddar cheese with Monterey Jack or any other cheese you like. If you prefer, you may use a 1.4 ounce packet of brown broth in place of the soy sauce.

Steps:
- Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
- Preheat the grill for high heat.
- Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.
- Oil the grill grate, and grill patties 5 minutes on each side, or until heated through and nicely browned.

ROASTED WINTER VEGGIE BURGERS
Here's a homemade vegetarian burger recipe for you that takes advantage of a variety of wintertime veggies. The hummus and fresh touch of rosemary make these extra special.

Steps:
- For the roasted winter veggie burgers: Heat a large nonstick skillet or cast iron over medium heat. Add the olive oil, sweet potato, minced onion, vinegar, and 1/4 teaspoon of the salt and saute until the sweet potato is nearly tender, about 15 minutes. Add the parsnip and carrot, cover, and cook, stirring occasionally, until all vegetables are tender, about 6 minutes. Stir in the garlic and saute for 1 minute. Set aside, uncovered, to cool slightly.
- Preheat the oven to 450 degrees F.
- Combine the hummus with the sundried tomato pesto. Set aside 1/2 cup. Add 1 cup of the hummus, the rosemary, black pepper, cayenne, and the remaining 3/4 teaspoon salt to a medium bowl and stir until combined. Stir in the tofu and breadcrumbs until combined. Stir in the sweet potato mixture and thoroughly combine with your hands.
- Firmly form the mixture into 8 (4-inch-wide) patties, about 2/3 rounded cup mixture each.
- Place the patties on a parchment paper-lined baking sheet. Roast until well browned on top, about 10 minutes, then flip and cook for 8 minutes more until they are cooked through and slightly crisp. Add a slice of cheese to each and return to oven until melted, about 2 minutes.
- Place the patties into the buns with the arugula, tomato (if using), sliced onion, and the remaining 1/2 cup hummus, and serve.
BEST EVER VEGGIE BURGER

- Preheat oven to 325°. Spread beans evenly on a parchment-lined rimmed baking pan. Bake until beans start to split open, 6-8 minutes. , Meanwhile, in a large dry nonstick skillet over medium heat, cook and stir walnuts, cumin, fennel and smoked paprika until fragrant, 2-3 minutes. Remove from pan and cool. In the same skillet skillet, heat oil from sun-dried tomatoes over medium heat. Add carrot, shallot and sun-dried tomatoes; cook and stir until tender, about 5 minutes. Add garlic; cook 1 minute longer. Remove from the heat; cool slightly. , Transfer carrot mixture to a food processor. Add beans, walnut mixture, oats, chia seeds, soy sauce and garlic salt. Pulse until combined. Shape into four 4-in. patties., In the same skillet over medium heat, cook patties in olive oil until browned, 3-4 minutes on each side. If desired, baste with barbecue sauce and serve on buns with toppings of your choice.

These veggie burgers are hearty, savory, and rich in meaty flavor, thanks to cremini mushrooms, rice, black beans, and walnuts. Your family may think you made them with real meat! The texture is a little softer than a beef patty, but a wonderful contrast to the beautiful, pan-fried crust that really stands up to the bun and toppings.

- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with foil.
- Place mushrooms and onion on the prepared baking sheet. Drizzle with 1 tablespoon oil and toss to coat.
- Roast in the preheated oven for 10 minutes. Reduce heat to 425 degrees F (220 degrees C) and add black beans to the pan. Cook until mushrooms and onions are browned and beans are dried on the surface, about 5 more minutes.
- Remove from the oven and let mixture cool for 10 minutes.
- Transfer mixture to a food processor. Add rice and walnuts and pulse until roughly chopped. Add Worcestershire sauce, ketchup, soy sauce, garlic powder, paprika, chili powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper and pulse until just combined. Add egg and pulse until just combined.
- Transfer mixture to a medium bowl and fold in bread crumbs until well mixed. Chill for 10 minutes.
- Form mixture into 8 patties and season each with salt and pepper.
- Heat 1 tablespoon oil in a large skillet. Add 4 patties and cook, undisturbed, until browned and a nice crust has formed, about 4 minutes. Flip and cook until done, 4 to 5 more minutes. Top with Muenster cheese and place on toasted buns.
- Add remaining 1 tablespoon oil to the skillet and repeat to cook remaining patties.

- To make the BBQ sauce: In large saucepan over medium heat, stir all ingredients to combine. Heat until just bubbling, whisking occasionally. Reduce heat to low and simmer, whisking mixture often, 15 minutes until well combined and slightly thickened. Adjust seasonings to taste. Set aside to cool.*
- Meanwhile, in large bowl, use pastry cutter or fork to mash chickpeas to a paste, leaving a few chickpeas whole for texture. Add quinoa, 1/2 cup bread crumbs, garlic powder, smoked paprika, cumin, sea salt, chili powder, cayenne pepper if desired, coconut sugar and 2 tablespoons BBQ sauce. Stir to combine. If mixture is too dry, add more BBQ sauce. If mixture is too wet, add more breadcrumbs. Adjust seasonings to taste.
- Heat large skillet over medium heat. To form patties, line 1/2 cup measuring cup or 1/3 cup measuring cup with plastic wrap. Fill with mixture and press down firmly. - Add 2 tablespoons grape seed oil to hot pan; swirl to coat. Sprinkle tops of burgers with more salt and chili powder. Gently place patties seasoned side-down in hot, oiled skillet. Cook 3 to 4 minutes until brown. Season top sides with more salt and chili powder, then flip. Cook another 3 to 4 minutes on other side.**
