SUNNY'S EASY S'MORES TRUFFLES
Steps:
- For the truffle base: In a double boiler (you know the rules, don't let that water touch the bottom of your top pot or bowl), add the milk chocolate, sweetened condensed milk, bittersweet chocolate and salt. Cook until the mixture reduces in volume and slightly thickens, 8 to 10 minutes. Transfer to a tray and then refrigerate until solid, about 3 hours.
- For the coating. Set the oven to broil or the highest temperature possible on your oven and preheat. On a large parchment paper-lined baking sheet with edges, add the marshmallows in 1 layer. Broil until the marshmallows are black: not brown, but black. If the oven is uneven, rotate the tray during broiling, but it needs to char them black. Have the strength to wait.
- Allow the marshmallows to cool completely; sliding the parchment off the sheet onto a plate and placing it in the fridge helps. Once the marshmallows are hardened completely, remove and finely chop. Add them to a large bowl with the graham cracker crumbs and stir to combine.
- Remove the truffle base from the refrigerator and, using a small scoop or spoon, make several balls a bit smaller than a golf ball or the size of a shooter marble. Roll these in the graham/marshmallow coating and place on a tray. Repeat with the rest of the truffle base and coating and refrigerate until ready to serve.
- Serve the truffles chilled or at room temperature.

Steps:
- Pour 2 cups of cold milk into a mixing bowl. Add pudding and beat with electric mixer on low for 30 seconds. Move mixer to medium speed and beat the pudding for 4 minutes. Place in the refrigerator until you are ready to assemble the trifle.
- Place graham crackers in a sealed plastic bag and crush fine. Place 1/2 of the COOL WHIP with 12-14 marshmallows in a microwave safe bowl. Microwave for 30 seconds and stir well. Marshmallows may still be lumpy and that is ok.
- Begin to assemble the trifle starting with a layer of graham cracker crumbs. Use half of your batch. Layer the marshmallow and COOL WHIP mixture over the graham cracker crumbs. Next, layer half of the pudding.
- Layer the broken pieces of one of your chocolate bars over the pudding. Make sure to layer them close to the edge for a more appealing look. It's ok if they do not completely cover your dish.
- Now it's time to add another layer of graham crackers. Use all but about a 1/2 of what you have left. We are saving a little for the top!
- Make another batch of marshmallow/COOL WHIP mixture by placing the rest of the COOL WHIP in the microwave safe bowl with about 12-14 marshmallows. Microwave for 30 seconds and mix well. Spread the marshmallow mixture over the graham crackers.
- Add the rest of the pudding over the marshmallow mixture. Top with remaining chocolate bar pieces. Cover the top of the trifle with marshmallows and then sprinkle the remaining graham cracker crumbs over them. Some of the crumbs will fall through the marshmallows and that is ok.
- Finish your marshmallows off by using a lighter to toast the tops.

- Beat the chilled heavy whipping cream at medium speed until soft peaks begin to appear. Sprinkle the powdered sugar and vanilla extract over the whipped cream and beat at medium-high speed until stiff peaks form (but do not overbeat or you will end up with butter). Gently fold 1 cup mini marshmallows into the whipped cream; set aside.
- Set out eight half-pint Mason jars (or 8-ounce glasses). Place about 2 tablespoons chocolate pudding into the bottom of each jar (which will use up half of the total pudding). Coarsely crush three graham crackers in a plastic baggie using a rolling pin or the flat side of a meat mallet; divide the crumbs between the eight jars, sprinkling to make an even layer over the pudding. Use a knife to divide the marshmallow whipped cream in half. Place a dollop of the whipped cream into each jar, spreading it to cover the graham cracker crumbs and using up half of the total whipped cream.
- Crush 3 more graham crackers and divide the crumbs between the jars, sprinkling them on top of the whipped cream. Place 2 more tablespoons of chocolate pudding on top of the crumbs in each jar, using up the remainder of the chocolate pudding. Crush the final 3 graham crackers and divide the crumbs between the jars, sprinkling them on top of the pudding. Divide the remaining marshmallow whipped cream between the jars, spreading it to cover the crumbs.

- In a trifle dish add a layer of brownie pieces (for me, this was a little less than half the pan). Then, top the brownie pieces with about half of the pudding. On top of the chocolate pudding, add a layer of broken graham crackers. I just broke them up in a baggie. I wanted small pieces, but not just crumbs. Make sure the chocolate pudding is covered well with the graham cracker.
