Party pleasing angels on horseback-oysters wrapped in partially cooked bacon then grilled or broiled and spritzed with lime or lemon-date back to Victorian England. A perfect appetizer for any holiday get together!

16-32 small oysters (or scallops), or larger ones cut in half, shucked
8-16 slices of thin-cut bacon
16-32 wooden toothpicks
3-4 limes or lemons

Steps:

  • Pre-cook the bacon slices: Working in batches if necessary, cook the bacon slices on medium low heat in a large frying pan, until only about halfway cooked, but not crispy. You need to pre-cook the bacon a bit or else when you cook them with the oysters the oysters will be overcooked by the time the bacon is crispy. Set the bacon aside to cool.
  • Heat the grill: Get a grill or broiler good and hot while you wrap the oysters.
  • Wrap bacon around oysters: To make an angel on horseback, you wrap 1/2 a piece of bacon around the small oyster and secure it with the toothpick. Overlap the edges of the bacon by about an inch if you can.
  • Grill or broil: Grill or broil over high heat to cook the oyster and crisp the bacon, about 5 to 6 minutes on the first side Turn them over and grill another 2 to 4 minutes. You will need to turn them once or twice to get a good crispiness on all sides.
  • Sprinkle with lemon or lime juice: As soon as they come off the heat, squirt with the lemon or lime juice and serve hot.

This recipe was given to me years ago. It is enough to serve one hungry man or 6 ladies.

12 shucked oysters
12 slices bacon
½ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon smoked paprika
2 tablespoons chopped fresh parsley

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Set a wire rack into a small baking dish.
  • Wrap each oyster with a slice of bacon, and secure with a toothpick. Sprinkle with salt, pepper, paprika, and parsley; set onto wire rack.
  • Bake in the preheated oven until the bacon is crispy, 10 to 12 minutes. Serve immediately. They aren't as good once they get cold.

Angels on Horseback are absolutely delicious, and so easy to make that they lend themselves perfectly to catering for larger numbers of people.

20 Strips of streaky bacon
40 Fresh mussels (or oysters / scallops)
40 Toothpicks

Steps:

  • Fry the bacon over medium heat until it is lightly browned but not crispy. Remove the bacon from the pan and allow it to coon for a few minutes, then cut it in half across the grain.
  • Grab a half strip of bacon and one of the seafood pieces and wrap the bacon around the seafood. In this case I am using fresh mussels. Press a toothpick through the overlap of bacon to secure it in place. Continue until all of the skewers are done.
  • Place the angels in a roasting tin and grill them on the second highest rack in you oven until well browned and crispy. Turn the skewers over and grill the other side until crispy.
  • By grill, I mean using the top element of your oven on maximum temperature, which is normally 250c.
  • The grilling is pretty quick, so be sure to keep a watchful eye on your creation so that it does not burn.
  • Remove the angels from the oven, transfer to platters and serve hot or cold, although I must add that they are better on the hot side.
