Super Green Juice image

This pretty emerald juice is a great way to use up greens you may have sitting in the fridge. It's also a good source of both vitamins C and K. Be sure to drink your juice as soon as possible after it's made for the most nutritious bang. Adding chia seeds helps replace the fiber that is lost in the juicing process.

1 to 2 large, juicy lemons, peel and pith removed
1 medium Granny Smith apple, peeled and cored
2 romaine lettuce leaves
1/2 large cucumber, washed
1 cup loosely-packed hearty greens, such as spinach or kale
1 tablespoon chia seeds, optional

Steps:

  • Juice, in this order, the lemons, apples, lettuce, cucumber and greens, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. You can use this in lots of different dishes to up the nutrition level. Add to pasta dishes, guacamole, soups, This recipe makes about 2 cups of puree; double it if you want to store another 2 cups. It will keep in the refrigerator for up to 3 days, or you can freeze 1/4-cup portions in sealed plastic bags or small plastic containers. From the Sneaky Chef!

Number Of Ingredients 4

2 cups raw baby spinach leaves
2 cups broccoli florets (fresh or frozen )
1 cup sweet peas, frozen
2 -3 tablespoons water

Steps:

  • Raw baby spinach is preferred to frozen spinach for this recipe (more mild flavor); if you must use frozen spinach, only use 1 cup of it.
  • If using raw spinach, thoroughly wash it, even if the package says "prewashed."
  • To prepare on the stovetop, pour about 2 inches of water into a pot with a tight-fitting lid. Put a vegetable steamer basket into the pot, add the spinach and broccoli, and steam for about 10 minutes, until very tender. Add the frozen peas to the basket for the last 2 minutes of steaming. Drain.
  • To prepare in the microwave, place the broccoli and spinach in a microwave-safe bowl, cover with water, and microwave on high for 8 to 10 minutes, until very tender. Add peas for last 2 minutes of cooking. Drain.
  • Place the vegetables in the bowl of your food processor along with 2 tablespoons of water. Puree on high until as smooth as possible. Stop occasionally to push the contents to the bottom. If necessary, use another tablespoon of water to smooth out the puree.
  • This recipe makes about 2 cups of puree; double it if you want to store another 2 cups. It will keep in the refrigerator for up to 3 days, or you can freeze 1/4-cup portions in sealed plastic bags or small plastic containers.

Number Of Ingredients 4

2 cups cauliflower florets (about half a small head)
1 -2 medium zucchini, peeled and coarsely chopped
1 teaspoon fresh lemon juice
1 -2 tablespoon water, if necessary

Steps:

  • To prepare White Puree:.
  • On the stovetop, pour about 2 inches of water into a pot with a tight-fitting lid. Put a vegetable steamer basket into the pot, add the cauliflower, and steam for about 10 minutes, until quite tender. Drain.
  • To prepare in microwave, place the cauliflower in a microwave-safe bowl, cover it with water, and microwave on high for 8 to 10 minutes or until very tender. Drain.
  • Meanwhile, place the raw peeled zucchini with the lemon juice in your food processor and pulse a few times. Next add the cooked cauliflower and 1 tablespoon of water to the food processor (work in batches if necessary) and puree on high until smooth. Stop occasionally to push the contents to the bottom. If necessary, use another tablespoon of water make a smooth puree, but the less water, the better.
  • This recipe makes about 2 cups of puree; double it if you want to store more. It will keep in the refrigerator for up to 3 days, or you can freeze 1/4-cup portions in sealed plastic bags or small plastic containers.

2 stalks celery
½ cup baby carrots
1 ½ cups cold water, or to taste
½ cup fresh spinach
1 medium apple - peeled, cored, and sliced
½ medium lemon, juiced
2 small sliced fresh strawberries

Steps:

  • Place celery and carrots in a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 5 minutes. Drain and transfer to a blender.
  • Add water, spinach, apple, lemon juice, and strawberries; blend until smooth with only small chunks remaining, 2 to 3 minutes. Strain into a cup.

Guacamole is one of the few green health foods that most guys will gladly dip into. In this recipe, the addition of broccoli, spinach, and peas in the Recipe #390699(which is basically steamed except the peas and blended) increases volume while simultaneously turning this snack into a superfood. Feel free to add one or all of the optional extra boosts, which are not only traditional for guacamole, but also add another important layer of nutrients. From The Sneaky Chef cookbook.

2 ripe avocados
1 lime, juice of
1/2 teaspoon salt
1/4-1/2 cup green puree (Sneaky Chef's Make-Ahead Green Puree )
1/2 cup chopped red onion, chopped tomatoes, handful of chopped cilantro (or fresh basil and or chopped jalapenos, to taste)

Steps:

  • Halve the avocados lengthwise, remove the pit, and scoop out the flesh.
  • In a small bowl, combine the avocado with the lime juice, salt, Green Puree, and the optional extras, if using.
  • Blend lightly with a fork.
  • Serve with chips, toast, pita bread, or as a spread for a sandwich!

This can be used to boost nutritional value for lots of recipes! Use in chocolate pudding, milk shakes, green icings, casseroles, etc. Green juice is an extremely nutrient dense food. One tablespoon is equivalent to eating 1/4 cup of spinach leaves. It contains iron, calcium, and enzymes for digestion, as well as chlorophyll and carotens for disease fighting power. And just think, your kids, husband, guests, etc. won't even know! :) This recipe was gleaned from The Sneaky Chef cookbook by Missy Chase Lapine.

3 cups raw baby spinach leaves (or 2 cups frozen chopped spinach or frozen chopped collard greens)
1 cup water

Steps:

  • Wash raw spinach(even if the bag says prewashed). Bring water to a boil in the water in a medium pot. Put in spinach or collards, bring back to a boil, then reduce heat to low and allow to simmer for 10 minutes.
  • Pour into a fine mesh strainer over a container or bowl, pressing the green pulp with the back of a spoon until all the liquid is released.
  • Store in the refrigerator for up to 3 days, or freeze 1/4 cup portions in sealed plastic bags or small plastic containers. This makes about 1 cup. Double the recipe if you want to store another cup of juice.
