My husband and three children love this tender, sweet and spicy chicken. Peach preserves add just a touch of sweetness, while taco seasoning and salsa give this dish some kick. This entree can be made even zippier yet by adding more taco seasoning and using spicier salsa. -Sheri White, Higley, Arizona

3 tablespoons taco seasoning
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 to 2 tablespoons canola oil
1-2/3 cups chunky salsa
1/2 cup peach preserves
Hot cooked rice

Steps:

  • Place taco seasoning in a large shallow dish; add chicken and turn to coat. , In a large skillet, brown chicken in oil until no longer pink. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until heated through Serve with rice.

1 can (20 ounces) unsweetened pineapple chunks, undrained
1-1/3 cups orange marmalade
1 cup picante sauce
1 teaspoon chili powder, divided
1-1/4 pounds boneless skinless chicken breasts, cut into strips
1 large green pepper, cut into 1-inch pieces
1 medium onion, chopped
1 tablespoon canola oil
Hot cooked rice
Minced fresh cilantro

Steps:

  • In a bowl, combine the pineapple, marmalade, picante sauce and 1/2 teaspoon chili powder; set aside. Sprinkle remaining chili powder over chicken. , In a large skillet, saute the chicken, green pepper and onion in oil until chicken juices run clear. Reduce heat; add the pineapple mixture. Cook until heated through, 2-3 minutes. Serve with rice; garnish with cilantro.

I made this up very quickly one night when I had not much time and a couple of chicken breasts. The result was so fantastic that I could have licked the plate! It was so easy but tasted like it took an age to prepare

2 chicken breasts
1 small hot red chili pepper
1 lime, juice of
2 tablespoons butter
2 tablespoons olive oil
5 tablespoons soy sauce (dark)
1 teaspoon lemongrass (in olive oil , jar type)
1 clove garlic, mashed
salt
pepper
oven cooking bag

Steps:

  • place chicken breasts in bag add all the other ingredients and move around to coat the chicken allow to marinade for about half an hour place in the oven on a baking tray at 220C and cook for 25 minutes.
  • ~~~~~~~~~~~~~~.
  • I served this with roasted new potatoes that I put in about 20 minutes before the chicken and a celery and cucumber salad with balsamic dressing.
  • ~~~~~~~~~~~~~~.
  • The next time I make it I am going to do it in the Crockpot.
