NUT-FREE SNOWBALL COOKIES MADE WITH CAKE MIX
This Snowball Cookie Recipe is nut-free, soft, chewy, tender cake mix cookies coated in powdered sugar to look like "snowballs." Perfect for the holidays!

Steps:
- Preheat oven to 350 degrees.
- Mix all ingredients, except powdered sugar, on medium until well combined. Chill for thirty minutes. If dough feels sticky, add 1/4 cup flour or powdered sugar.
- Take about 2 tablespoons of dough and roll into a ball. Roll dough in powdered sugar (optional) and place on a parchment lined cookie sheet. Bake in preheated oven for 9-11 minutes, or until the tops start to crack. (Don't let them get brown - it will ruin the "snowball" effect.
- Let cool on the cookie for a few minutes before transferring to a cooling rack. Dust with sifted powdered sugar.

Steps:
- To make Cookie Pancake Mix, mix Bisquick mix, baking powder and granulated sugar in medium bowl.
- In clean quart jar, add powdered sugar, followed by Bisquick mixture, and finally chopped pecans. Press each layer down with back of spoon to gently compact it before adding the next layer. Top the jar with a lid and ring.
- To make the pancakes, dump Bisquick mixture and pecans into large bowl, reserving powdered sugar for topping. Add milk, egg, vanilla and butter, and stir until combined. Batter will be a little lumpy.
- Pour by 1/3 cupfuls onto greased hot skillet. Cook until edges are dry and bubbles appear on the surface, about 3 minutes. Turn, and cook on other side 2 minutes. Repeat with remaining batter.
- Serve pancakes with generous sprinkling of powdered sugar and, if desired, maple syrup.

- In a large bowl, cream butter, 1/2 cup confectioners' sugar and vanilla until light and fluffy. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Stir in nuts. Refrigerate 1 hour or until firm. , Preheat oven to 350°. Shape dough into 1-in. balls; place 1 in. apart on ungreased baking sheets. - HEAT oven to 350°F.
- COMBINE olive oil and oats. Let stand 5 minutes. Stir in cake mix, eggs and vanilla until well blended. Fold in nuts. Form into 1-inch balls and place about 2 inches apart on ungreased cookie sheet.
- BAKE 8 minutes or until set. Cool on cookie sheet 1 minute. Remove cookies to cooling rack. Roll in powdered sugar while still slightly warm.

- In a medium sized microwavable bowl melt the margarine. Gradually mix in the milk and sugar. Microwave for 5 minutes, stirring every so often. Set aside.
- Combine the chocolate cake mix, rolled oats, and the first amount of coconut in a large bowl. Pour the hot liquid mixture on top, and stir to combine. Cool in fridge for a couple horus, then cover with plastic wrap and leave in fridge over night.
- Roll the dough into aprox. 1 inch balls and roll in the remaining amount of coconut to cover. Store in a covered container in the fridge or freezer.

HOLIDAY SNOWBALL COOKIES
Mom made these for Christmas every year, as long as I can recall. She also made them for hundreds of weddings! She would let us (the kids) do the sugaring at the end. I tweaked my mom's recipe by using some fat-free items and also adding the milk and sour cream. The original version was a harder cookie. This will make a softer one. These can be stored in an airtight container and refrigerated.

- Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
