SNOWMAN BROWNIES
Make the holidays even sweeter with these fun and easy snowman brownies!

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom of 9-inch square pan with cooking spray.
- Make brownie batter as directed on box. Spread batter evenly in pan. Bake 27 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Cool completely, about 1 hour 30 minutes.
- Use 1-inch and/or 2-inch round cutter to cut brownies into rounds. Discard scraps, or reserve for another use.
- Use offset spatula to frost top of each brownie with about 1 teaspoon frosting. Place coconut in small bowl; roll edges of each frosted brownie in coconut. Decorate each brownie with mini chocolate chips for eyes and mouth and jelly bean triangle for nose.

Everybody says their brownies are the best, but these really are the best. They feature the "holy trinity" of brownie perfection-a crispy, flaky top, chewy edges, and a fudgy center. Serve with a glass of ice cold milk.

- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish or pan, then line with parchment paper if desired to make getting the brownies out easier.
- Mix flour and salt together in a bowl; set aside.
- Place chopped chocolate and butter into a heatproof bowl and set over a saucepan with 1 inch of very gently simmering water. When the butter and almost all of the chocolate is melted, stir until smooth. Turn off the heat and set aside.
- Mix sugar and eggs in a mixing bowl with an electric hand mixer until very airy, thick, and creamy, about 5 minutes. Mix in vanilla extract, then slowly drizzle in the melted chocolate mixture, while mixing on high speed.
- Dump in the flour mixture and mix on low speed just until the flour disappears. Use a spatula to transfer the batter into the prepared baking dish and spread as evenly as possible.
- Bake in the center of the preheated oven until a toothpick inserted near the center comes out virtually clean, about 30 minutes. Let cool on a wire rack for 15 minutes. Use a spatula to lightly press down the higher parts of the brownie around the edge of the dish. Let cool to room temperature, 20 to 30 minutes, before removing and cutting into 9 pieces.

FROSTY SNOWMAN MERINGUES

- Heat oven to 200°F. Line 2 cookie sheets with cooking parchment paper.
- In large bowl, beat egg whites, cream of tartar and almond extract with electric mixer on medium speed until soft peaks form. Gradually add sugar, 2 tablespoons at a time, beating on high speed until stiff glossy peaks form and sugar is almost dissolved.
- Spoon meringue mixture into large decorating bag fitted with 1/2-inch plain tip. For each snowman, squeeze and release bag in place to form 2-inch ball on cookie sheets. Lift bag; squeeze and release bag to form middle layer of snowman. Lift bag; squeeze and release bag to form top section of snowman. Insert pretzel stick pieces into sides of snowmen for arms. Place chocolate chips on snowmen for eyes, candy corn tips for noses and 3 miniature candies on each snowman for buttons.
- Bake 2 hours or until set and dry but not brown. Turn off oven; leave meringues in oven with door closed 8 hours. Decorate with fruit snacks for caps.

- In a large bowl, whisk together the sugar, butter, eggs and vanilla. Combine the flour, cocoa, baking powder and salt; add to sugar mixture until well blended. M&M'S SNOWMAN

- Beat three 8-ounce packages cream cheese and 1 stick butter (both at room temperature) with a mixer until creamy. Beat in 1 cup confectioners' sugar, 2 teaspoons vanilla and 1/2 teaspoon salt. Divide into 3 balls (large, medium and small) and wrap each in plastic wrap. Chill 2 hours, then roll in unsweetened shredded coconut and stack the snowman. Add brown mini M&M'S for the eyes, mouth and buttons, and red and green M&M'S for the nose and scarf (attach with icing, if necessary). Add pretzel arms. Serve with fruit or cookies.
SNOW FLECKED BROWNIES

- Preheat the oven to 350 degrees F.
- Line the sides and base of a 13 by 9 by 2-inch baking pan with foil or parchment paper.
- Melt the butter and dark chocolate together in a large heavy based pan over a low heat. In a bowl or large measuring glass, beat the eggs together with the sugar and vanilla extract. Allow the chocolate mixture to cool a little, then add the egg and sugar mixture and beat well. Fold in the flour and salt. Then stir in the white chocolate. Beat just to combine and then scrape into the prepared pan. Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey. Even with such a big batch you do need to keep checking on it; the difference between gooey brownies and dry ones is only a few minutes. Remember, too, that they will continue to cook as they cool.
- To serve, cut into squares while still warm and pile up on a large plate, sprinkling with powdered sugar pushed with a teaspoon through a small sieve and dotting with birthday candles as you go. Set alight and enjoy the festive scene.
