COCONUT SNOWMEN



Coconut Snowmen image

Our snowman is made of vanilla ice cream rolled in coconut. His eyes, mouth, and buttons are licorice candies, his carrot nose marzipan, and his hat a toasted marshmallow atop a chocolate cookie. To make these snowmen, you will need three ice-cream scoops in varied sizes. Shoestring licorice cut into small pieces can also be used for the buttons, eyes, and mouth.

2 1/2 pints best-quality vanilla ice cream
Two 7-ounce packages coconut
Orange food coloring
1 tablespoon marzipan (1/4 ounce)
40 Sen Sen licorice candies
4 marshmallows
4 chocolate wafers
Sifted confectioners' sugar

Steps:

  • Line a baking pan that fits in your freezer with parchment paper. Scoop the vanilla ice cream, rounding scoops as much as possible, until you have 4 of each size, and place on the prepared baking pan. Place the pan in the freezer to harden for 15 minutes.
  • Remove the ice cream from the freezer, and roll in coconut. Return to pan, then return the pan to the freezer. Add orange food coloring to marzipan until carrot color is attained. Shape marzipan into small carrot shapes, using a paring knife to make ridges. Remove 1 small scoop of ice cream at a time from the freezer, and make faces using Sen Sen for eyes and mouth and marzipan carrots for the nose. Return to freezer until ready to serve.
  • Remove middle-size scoops from the freezer one at a time; place Sen Sen in a row down the front to create buttons. Remove remaining scoops from freezer, and stack to create snowmen, pressing slightly to adhere. Return snowmen to freezer.
  • Make the top hats by roasting marshmallows on skewers over a gas burner. Alternatively, place marshmallows on a baking sheet under the broiler, and cook until browned, rotating every few seconds. Place the toasted marshmallow on the chocolate wafer, and dust with sifted confectioners' sugar. Place the hat on the snowmen just before serving.

2/3 cup sweetened condensed milk

Steps:

  • In a large bowl, combine the coconut, confectioners' sugar, milk and butter. Shape into 1-1/4-in. balls; place on waxed paper-lined baking sheets. Loosely cover and chill for 1-1/4 hours or until firm. , In a microwave, melt vanilla chips at 70% power for 1 minute; stir. Microwave in additional 10- to 20-second intervals, stirring until smooth., Dip balls in melted chips; place on waxed paper-lined baking sheets. Chill until firm, about 15 minutes. Set aside remaining melted vanilla chips., In a microwave, melt semisweet chips on high for about 1 minute; stir. Microwave in additional 10- to 20-second intervals, stirring until smooth. , For hats, dip each marshmallow in chocolate; place on a waxed paper-lined baking sheet, allowing excess to drip down. Swirl the marshmallows in chocolate on waxed paper to create hat brims. Chill until firm, about 15 minutes., Level the top of coated coconut balls. Attach marshmallows hats, using reserved melted vanilla chips. With black icing, add eyes and a mouth to each face; with orange icing, add a nose. Use red icing and leaf candies for holly on hats. Store in an airtight container.

1 1/2 cups rice flour
1/2 cup unsweetened finely shredded coconut
10 tablespoons unsalted butter, at room temperature
1 1/4 cups confectioners' sugar
Pinch of salt
1 vanilla bean, split lengthwise, seeds scraped
1 large egg

Steps:

  • Whisk the rice flour and coconut in a small bowl. Beat the butter, 1/2 cup confectioners' sugar, the salt and vanilla seeds in a large bowl with a mixer on medium speed until smooth and creamy, about 2 minutes. Beat in the egg, then beat in the flour mixture until just combined. Cover and refrigerate until the dough is no longer sticky, about 1 hour.
  • Preheat the oven to 325 degrees F. Roll heaping tablespoonfuls of dough into balls and arrange 1 inch apart on a baking sheet. Refrigerate until firm, about 15 minutes.
  • Bake the cookies until set and lightly browned on the bottom, about 20 minutes. Let cool 10 minutes on the baking sheet.
  • Put the remaining 3/4 cup confectioners' sugar in a small bowl. Gently roll the warm cookies in the confectioners' sugar and return to the baking sheet. Reroll the cookies in the confectioners' sugar, then transfer to a rack to cool completely.

  • Cover 18x10-inch tray or cardboard with foil. To make ice skates, attach candy cane to each cone using melted candy coating; let stand until set. Arrange cake rounds with sides touching on tray. Frost with frosting. Sprinkle with coconut, pressing gently so it stays on frosting.

1 cup all-purpose flour
1 1/4 cups confectioners' sugar

1 teaspoon vanilla extract
4 teaspoons milk

Steps:

  • Grind 1/2 cup of the coconut in food processor.
  • Chop remaining coconut and set aside.
  • Add flour, 1/4 cup of the confectioners' sugar and the salt.
  • Pulse to blend.
  • Add butter and vanilla; pulse until dough comes together.
  • Heat oven to 350 degrees.
  • Roll dough into 1-inch balls.
  • Place dough balls 1 inch apart on an ungreased baking sheet.
  • Bake cookies until firm but tender, 15 minutes.
  • Remove to rack, let cool completely.
  • In small bowl, stir together remaining 1 cup confectioners' sugar and enough milk until smooth but still thick.

4 ounces (1/2 cup) cream cheese, softened
1/2 cup sweetened shredded coconut
3 tablespoons thawed orange juice concentrate
1/2 cup butter
1/2 cup honey
Toasted sweetened shredded coconut, optional

Steps:

  • Grease two 8-in. round baking pans. Cut thawed bread dough in half; roll each half into a 10x8-in. rectangle. Combine cream cheese, coconut and orange juice concentrate; spread mixture on dough. Roll up jelly-roll style, starting with long side. Cut each roll crosswise into eight slices; place in prepared pans. Cover; let rise until almost doubled, about 1 hour. , Preheat oven to 350°. 8 cups confectioners' sugar, or as needed
¼ cup lemon juice, or as needed
24 sugar cookies
24 large marshmallows
1 (.75 ounce) tube black decorating gel
1 (.75 ounce) tube orange decorating gel
75 silver nonpareils, or as desired
1 (.75 ounce) tube red decorating gel
1 (.75 ounce) tube green decorating gel

Steps:

  • Beat egg whites lightly in a large bowl using an electric mixer until frothy. Slowly beat enough confectioners' sugar into egg whites to make icing that will hold shape; blend in lemon juice until desired consistency is reached.
  • Arrange cookies about 1-inch apart on a large sheet of waxed paper. Spread icing onto each cookie, allowing icing to drip over edges to look like melting snow.
  • Grease a microwave-safe plate. Place 1 marshmallow onto plate.
  • Microwave marshmallow until it starts to puff up, 20 to 30 seconds. Immediately place marshmallow on the edge of 1 cookie while the icing is still wet to look like a melted snowman. Repeat with remaining marshmallows and iced cookies.
  • Decorate 'melted snowmen' by piping 'twig-like arms' using black decorating gel on the icing. Make 'coal eyes' and a 'mouth' on the marshmallow using black decorating gel. Make a 'carrot nose' under the 'coal eyes' using orange decorating gel. Make 'coat buttons' by arranging silver nonpareils down the middle of the icing. Make 'scarves' or 'bow-ties' using red decorating gel or green decorating gel.
  • Allow cookies to fully dry before removing from waxed paper, at least 1 hour.

500g white bread mix
100g golden caster sugar
200-250ml warm milk
30g unsalted butter, melted and cooled
1 medium egg, lightly beaten
flavourless oil, for proving
plain flour, for dusting
300g icing sugar
100g desiccated coconut
black and orange fondant icing

Steps:

  • Combine the bread mix and caster sugar in a large bowl. Make a well in the centre and pour in 200ml of the milk, the melted butter and egg, then mix together swiftly with a wooden spoon. If it feels a little dry, add a dash more milk. Knead on a lightly floured surface for 5-10 mins until you have a dough that is smooth and springy. Put the dough in a large, lightly oiled mixing bowl, then cover and leave in a warm place for 1½-2 hrs, or until doubled in size.
  • Tip the dough out of its bowl onto a lightly floured surface and knock it back (gently kneading it a few times to expel the air). Split the dough into 10 equal-sized pieces, then shape each one into a ball and roll out to a diameter of about 10cm. Pinch the bottom tightly together to seal. Arrange nine of the buns, pinched-side down, on a baking sheet lined with baking parchment, ensuring there is a good amount of space between each one. Cover loosely and leave for 1 hr more to double in size.
  • Heat oven to 200C/180C fan/ gas 6. Bake for 20-25 mins in the centre of the oven until golden brown, then remove from the oven and leave to cool completely on the baking sheet.
  • Mix the icing sugar and 3 tbsp water together to create a thick, glossy icing. Dip each one in the icing, then in the desiccated coconut. Make two eyes using the black icing, plus smaller blobs (to look like coal) for the mouth. Use the orange icing to make little carrot noses. Leave the buns to set at room temperature for 1 hr. Will keep in an airtight container for up to three days.
