30 fresh shiitake caps
2/3 cup good-quality sake
4 tablespoons dark soy sauce
2 2 tablespoons mirin
2 2 tablespoons sugar

Steps:

  • Clean the mushroom caps and remove stems. In a saucepan, combine the sake, soy sauce, mirin, and sugar and bring to a boil. Reduce to a simmer and add the mushrooms. Simmer for 7 minutes. Remove mushrooms and use in a salad immediately, or cool and use later with grilled meats.

2 snowshoe hares or 2 rabbits, each cut into 7 pieces
seasoned flour, for dredging
3 tablespoons bacon drippings
3 large onions, sliced
1 cup water
1 cup sour cream
1/4 teaspoon thyme
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Skin, clean and cut into pieces the rabbit[s].
  • Dredge with seasoned flour.
  • Melt the bacon drippings in a skillet or oven proof casserole and saute the rabbit until brown.
  • Cover with the onion slices, sprinkle on the seasonings, add one cup water and one c.
  • sour cream.
  • Cover and simmer very gently or slow bake in a 300 F oven for an hour.

1 cup vegetable broth
2 tablespoons butter

Steps:

  • Heat the olive oil in a skillet over medium heat, and cook the garlic just until golden. Mix in mushroom pieces, and cook 10 minutes, until tender.
  • Pour the broth into the skillet. Stir in butter until melted. Season with Italian seasoning and salt.

1 pound angel hair pasta
¼ cup extra virgin olive oil
2 cloves garlic, minced
2 bulbs shallots, minced
1 pound shiitake mushrooms, thinly sliced
½ teaspoon dried thyme
½ cup white wine
4 (6 ounce) cans marinated artichoke hearts, drained and chopped
¼ cup small capers

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large heavy skillet over low heat; sweat garlic and shallots until they start to become aromatic. Increase heat to medium and add mushrooms and thyme; saute until mushrooms begin to soften, about 3 minutes. Deglaze pan with wine and simmer 2 minutes. Stir in artichokes and capers and simmer 2 to 3 minutes more.
  • Pour mushroom mixture over pasta and serve.
