1 1/3 cups bread flour ((or plain / all purpose flour, Note 2))
2 tsp baking powder
3/4 tsp salt
3/4 tsp sugar
2 tsp olive oil ((or any other oil))
1/2 cup water ((cold tap water))
1 tbsp Extra Flour (, for dusting)
2 tsp vegetable oil (optional) (, for brushing crust (or canola or other neutral oil) (Note 3))

Steps:

  • Preheat oven to 250°C / 480°F (230°C fan) (Note 4.) Place shelf in the top quarter of the oven.
  • Spray pizza pan or baking tray lightly with oil.
  • Prepare pizza sauce and toppings. Keep shredded mozzarella in the fridge (Note 5).

Makes 6 to 8 servings

Number Of Ingredients 10

3⅔ cups (458 grams) all-purpose flour
1 teaspoon (5 grams) baking soda
1 teaspoon (6 grams) fine sea salt
1½ to 1¾ cups (360 to 420 grams) whole buttermilk
1 tablespoon (2 grams) chopped fresh rosemary
2 ounces (57 grams) sliced cured chorizo
⅔ cup (148 grams) pizza sauce
8 bocconcini* (306 grams), halved
3 tablespoons (15 grams) grated Parmesan cheese
Garnish: chopped fresh parsley, chopped green onion, flaked sea salt

Steps:

  • Position oven rack in bottom third of oven. Preheat oven to 450°F (230°C).
  • In a large bowl, sift together flour, baking soda, and fine salt. Make a well in center. Add 1½ cups (360 grams) buttermilk. Using one hand like a claw, slowly fold flour mixture from sides of bowl into buttermilk until a softish, slack dough forms, adding up to remaining ¼ cup (60 grams) buttermilk if necessary. Turn out dough onto a lightly floured surface, and knead lightly for a few seconds; shape into a ¼-inch-thick rectangle. Turn dough over, and lightly roll into a 12×8-inch rectangle.
  • Brush a 13×9-inch baking pan with extra-virgin olive oil. Place dough in prepared pan. Press dough to fill pan, and sprinkle with rosemary. Scatter chorizo evenly onto dough. Spread pizza sauce over chorizo; place bocconcini on top. Sprinkle with Parmesan.
  • Bake for 15 minutes. Reduce heat to 400°F (200°C), and bake until cheese is browned and bubbly and an instant-read thermometer inserted in crust registers 200°F (93°C), 20 to 25 minutes more. Sprinkle with parsley, green onion, and flaked salt, if desired. Let cool for 5 minutes before serving.

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup margarine, softened
1 cup buttermilk
1 egg
¼ cup butter, melted
¼ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

Traditional Irish Soda Bread image

While soda bread with add-ins like currants and caraway can be delicious, it's not at all authentic. In Ireland, soda bread tends to be plainer and more restrained. Here is a classic recipe adapted from Darina Allen, an Irish television personality and the owner of the Ballymaloe Cookery School in Shanagarry. This soda bread is is best eaten still steaming from the oven, slathered with good salted Irish butter that melts on contact with your slice. It's a fine accompaniment to corned beef and cabbage, should you be making that dish this St. Paddy's Day. Or make this recipe all year long. That's how they do it in Ireland.

Number Of Ingredients 4

450 grams all-purpose flour (about 3 1/2 cups)
3 grams fine sea salt (about 1/2 teaspoon)
4 grams baking soda (about 3/4 teaspoon)
1 1/2 cups buttermilk, more as needed

Steps:

  • Heat oven to 450 degrees. In a large bowl, sift together the flour, salt and baking soda. Make a well in the center and pour in the milk. Using your hand, mix in the flour from the sides of the bowl. The dough should be soft but not wet and sticky.
  • Turn the dough out onto a well-floured work surface. Wash and dry your hands. Knead the dough lightly for a few seconds, then pat the dough into a round about 1 1/2 inches thick. Place it on a buttered baking sheet and using a sharp knife, cut a deep cross in the center of the dough reaching out all the way to the sides.
  • Bake for 15 minutes, then reduce the oven temperature to 400 degrees, and continue to bake until the top is golden brown and the bottom of the bread sounds hollow when tapped, about 30 minutes longer. Serve warm.
