Easy Soft Chicken Tacos image

These easy soft chicken tacos are so perfect for taco Tuesday! Quick and easy to prep and cook, chicken breast is seasoned with Mexican spices for a taco full of flavor.

2 chicken breast (cut into 1" pieces)
1 teaspoon Paprika
¼ - ½ teaspoon red pepper flakes (depending on spice preference)
1 teaspoon garlic powder
½ teaspoon dried mustard powder
1 teaspoon dried basil
1 teaspoon onion powder
2 Tablespoons lime juice (~1 lime)
12 small street tacos or 4" tortillas
¼ cup sour cream or Crema Mexicana
¼ cup pico de gallo (pre-prepared)
¼ cup fresh cilantro (chopped)
2 avocados (diced)
1 fresh jalepenos or red chiles (optional)

Steps:

  • For the chicken, combine all the marinade ingredients into a medium sized bowl or ziplock bag and then add the chicken, making sure the chicken is fully coated. Cover the bowl and refrigerate for 30 mins to 1 hour (depending on the time you have).
  • Heat a skillet/griddle pan over medium heat with oil and add the chicken. Cook for 5-7 minutes until chicken has been cooked through.Remove from heat and place onto a plate.
  • Warm the tortillas and serve by adding in chicken filling and then any of the other toppings you fancy.

1 can (15 ounces) black beans, rinsed and drained
1 cup salsa
1 tablespoon taco seasoning

1 ½ pounds skinless, boneless chicken breast meat - cubed
⅛ cup red wine vinegar
½ lime, juiced
1 teaspoon white sugar
½ teaspoon salt
½ teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
10 (6 inch) flour tortillas
1 tomato, diced
¼ cup shredded lettuce
¼ cup shredded Monterey Jack cheese
¼ cup salsa

Steps:

  • Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes.
  • Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

7 flour tortillas
2 tablespoons butter, melted
1 rotisserie chicken, shredded
1 ½ cups salsa
sour cream
mexican blend cheese
guacamole

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Generously brush butter onto both sides of the tortillas.
  • Using a circular cookie cutter or a mason jar lid, cut the tortillas into small circles.
  • Flip a 12-cup muffin tin over and place a cut-out piece of tortilla in the space between two cups, so that they make a mini taco shape. One muffin tin will fit 17 mini tacos.
  • Bake for 5-8 minutes, or until just turning golden brown and crispy. (Times and temperatures may vary based on oven.) Make sure to check on them every couple of minutes to make sure they don't burn.
  • Shred a rotisserie chicken, removing all bones and skin.
  • Place shredded chicken in a large pan over medium-high heat and add salsa. Stir well to combine.
  • Serve along with your favorite taco toppings.

1/4 cup lime juice
1/4 cup vegetable oil
2 cloves garlic, finely chopped
1 teaspoon ground cumin
1/2 teaspoon salt
1 lb boneless skinless chicken breasts, cut into 1-inch cubes
1/2 red onion, cut into 1-inch wedges, separated into layers
1 large red or green bell pepper, cut into 1-inch squares
8 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package), heated as directed on package
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • In small bowl, mix lime juice, oil, garlic, cumin and salt. In large resealable food-storage plastic bag, place chicken and 1/4 cup of the lime juice mixture. Seal bag; shake to coat chicken evenly. Refrigerate 30 minutes to marinate. Set remaining lime juice mixture aside until serving time.
  • Heat gas or charcoal grill. Remove chicken from marinade; discard marinade. On 8 (12-inch) skewers, alternately thread chicken, onion and bell pepper. Place skewers on grill over medium heat. Cover grill; cook 10 to 11 minutes, turning occasionally, until chicken is no longer pink in center and vegetables are done as desired.
  • Place kabobs on large plate; drizzle with reserved lime juice mixture and turn to coat evenly. Slide chicken and vegetables off each skewer onto 1 tortilla; serve with salsa.

1 broiler/fryer chicken (3-1/2 pounds), cut up and skin removed
1 can (8 ounces) tomato sauce
1 can (4 ounces) chopped green chiles

10 flour tortillas (8 inches), warmed

I had a busy day and came up with this easy recipe for soft tacos. It's good, fast and inexpensive. I usually make two at a time but if you have a tortilla warmer, that will make it easier for everyone to eat at the same time.

1 whole roasted deli chicken
1 cup salsa
3 cups lettuce, chopped
3 medium tomatoes, chopped
2 cups Mexican blend cheese
1/2 cup sour cream
1/4 cup jalapeno (optional)
8 (7 inch) flour tortillas
taco sauce

Steps:

  • Remove chicken meat and make into bite size pieces, place in a 10-12" skillet.
  • Add salsa to the chicken and simmer on low for 10-15 minutes.
  • Place lettuce, tomatoes and sour cream into individual bowls and set aside.
  • Place two tortillas in a brown lunch bag,.
  • close tightly and microwave for 30 seconds.
  • Place 2 tortillas on a plate and add ingredients in any order you like. There is no real way to make a taco.
  • While the first person is making their tacos, heat the second person's tortillas, and so on. This way everyone's food is hot. If you have a tortilla warmer, that would work great.
