APPLESAUCE-OAT MUFFINS
These are so good for a winter breakfast when served warm.

- Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
- Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. Cool at least 10 minutes before serving.

Steps:
- Heat oven to 400.
- Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).
- Combine oats, flour, cinnamon, baking powder and baking soda.
- Add applesauce, milk, brown sugar, oil and egg white.
- Mix just until dry ingredients are moistened.
- Fill muffin cups almost full.
- For topping combine remaining ingredients. Sprinkle evenly over batter.
- Bake 20-22 minutes until deep golden brown.
- Serve Warm.

- Preheat the oven to 425°F.Prepare a muffin pan by spraying with nonstick spray.
- In a large bowl, whisk the egg. milk, melted butter, applesauce, and vanilla, then stir in the oats.
- In a medium bowl, mix the flour, baking soda, baking powder, sugar, cinnamon and salt.
- Combine the wet ingredients, dry ingredients chocolate chips and raisins until just mixed.
- Evenly distribute the batter in the prepared muffin pan.
- Top the batter with a sprinkle of sugar on each muffin.
- Bake at 425°F for 5 minutes, then lower the temperature to 350°F. Continue baking for about 15 minutes or until a toothpick inserted into the center of the muffin comes out completely dry.
- Cool in the pan for 5 minutes, before transferring to a wire rack to finish cooling.

BREAKFAST OATMEAL MUFFINS
When we were farming and raising our three children-now all grown-oatmeal was the "main course" for breakfast many mornings. Often, I'd end up with a cup or so of it left over. So I was glad when my sister-in-law, a war bride from England, asked if I'd like to give her recipe for oatmeal muffins a try! They're so nice to have with a cup of coffee if someone stops in to visit. They freeze well, too, and keep moist...I take them to our church bake sales. These days, I also have half a dozen grandchildren to make my muffins for.

- In a large bowl, combine flour, brown sugar, baking powder and baking soda. In another bowl, combine oil, eggs, oatmeal, raisins and vanilla; add to dry ingredients and stir just until moistened (the batter will be thin). Spoon into 12 greased muffin cups. I originally found this recipe on SparkRecipes, but I've made a few adjustments. The milk, sugar, and flour can all be substituted for cow's milk or soy milk, splenda, and whole wheat or regular all purpose. I love the fact that there is no oil or butter needed with this recipe. These make an excellent snack or breakfast. Enjoy!
