BUTTERMILK BREAD II
This bread is delicious plain or toasted. I make it at least once a week.

Steps:
- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
- Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

SOLAR BAKED BUTTERMILK BREAD

Steps:
- Pour buttermilk, water, honey and oil into the bread machine pan. Sprinkle both the flours over the liquid mixture, ensuring that it is completely covered. Add the salt in one corner of the bread pan. Make a shallow indentation in the center of the flour without reaching the liquid and add the yeast. Set the bread machine to the dough only setting. At the end of the rise cycle turn the dough out onto a lightly floured surface and shape it into a loaf. Put the dough in a lightly oiled loaf pan, cover with oiled plastic wrap and let it rise in a warm spot for about 30 minutes. Set the Global Sun Oven out to preheat while the loaf is rising. Bake the bread in the Sun Oven for until it's starting to brown and sounds hollow when tapped, about 40 minutes. Makes 1 loaf

SOLAR PUMPKIN BREAD

- Set Global Sun Oven out to preheat Mash pumpkin and put it in the bread machine pan. Add the buttermilk, water, and oil. Sprinkle the flour and the cornmeal over the liquids covering them completely. Add the syrup and salt in separate corners of the bread machine pan. Make a shallow indentation in the center of the flour (don't go down as far as the liquid) and add the yeast. Set bread machine to dough and start. Add pumpkin seed during the last 5 minutes of kneading. When the dough cycle is complete, remove dough from the pan and divide in two. Shape dough in to a loaf and let rise, covered with greased plastic wrap, in greased loaf pans for about 30 minutes. Bake bread in Sun Oven until it sounds hollow when tapped on the bottom, about 1 hour.

BUTTERMILK BREAD ( ABM )
I found this recipe in the 2004 Taste of Home Quick Cooking Cookbook.It was submitted to them by Nita Anderson of Florence Alabama.NOTE:I just used the dough cycle on my machine. After removing dough from machine, it was kneaded just a bit then formed into a loaf,placed into a greased loaf pan then covered with a towel.I left it to rise in a warm place for 1 hour. Then preheated my oven to 350 degrees,baked for 35 minutes or until I heard a hollow sound when it was " Thumped "This recipe makes a 1 1/2 pound loaf of very soft bread. Submitted to Food.com ( A.K.A. ZAAR ) on March 28th., 2011.

- Select basic bread setting.( Check dough after 5 minutes, to see if 1 to 2 tablespoons of flour or water is needed.).
- Chose crust color and loaf size if available.
- Bake according to your bread machine directions.

CHOCOLATE BUTTERMILK BREAD
A moist and tangy dessert bread made with buttermilk and pecans. When cool, it is frosted with a buttery chocolate pecan icing.

- Preheat the oven to 350 degrees F (175 degrees F). Grease only the bottom of a 9x5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk. Combine the flour, 1/2 cup cocoa, baking powder, baking soda and salt; stir into the buttermilk mixture until moistened. Mix in 1/3 cup pecans. Pour into the prepared pan.
- Bake for 55 to 65 minutes in the preheated oven, until a wooden pick inserted near the center comes out clean. Cool in the pan for 15 minutes before removing to a wire rack to cool completely.
- Combine the margarine, 1/4 cup cocoa, and milk in a saucepan over medium heat. Cook, stirring, until melted and smooth. Remove from heat, and mix in the vanilla and confectioners' sugar. Stir in the remaining 1/2 cup pecans. Spread on top of the cooled loaf.
