SOUPE AUX POIS (PEA SOUP)

Soupe Aux Pois (Pea Soup) image

This is from the Canadian Living Slow Cooker Recipe Cookbook. It states that this soup is still the test kitchen's favourite pea soup. This keeps well in the refrigerator, you might have to thin it a bit with water when reheating. If you do not have a ham bone you may use an 8 oz piece of salt pork, chopped into bite sized pieces.

FRENCH-CANADIAN PEA SOUP (SOUPE AUX POIS)

French-Canadian Pea Soup (Soupe aux pois) image

A traditional dish for Fridays (a legacy from Quebec's religious past). After cooking, I like to remove about half the peas and puree them in order to thicken the soup. I use a ham bone or pork hocks instead of salt pork. The savoury is essential to get the right flavour. You can also soak the peas overnight instead of using the quick-soak method.

BABA'S BEST SORREL SOUP

Baba's Best Sorrel Soup image

This hearty, herbed soup has a wonderful old-world flavor! After I had experimented with and tweaked several sorrel soup recipes, my 88-year-old father-in-law declared it tasted like his mom made back in Poland - the ultimate compliment! It doesn't look like much, but is it ever tasty and filling. Use fresh sorrel in the spring, when the leaves are most tender. Top each serving with a dollop of sour cream and sprinkle with your favorite fresh herbs - parsley, dill, or cilantro. Serve with crusty bread or hearty biscuits.
