SOUR CREAM NOODLE BAKE

Steps:
- Preheat the oven to 350 degrees F.
- Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
- Cook the egg noodles until al dente. Drain and set aside.
- In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
- To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
- Serve with crusty French bread.
- To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
- To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
SOUR CREAM-NOODLE CASSEROLE
I got this recipe from an old Southern Living cookbook. My family enjoys this casserole. I used Ricotta cheese instead of cottage cheese, since my kids hated cottage cheese.

- Cook noodles in boiling salted water according to package directions.
- Rinse and drain.
- In skillet, brown meat in butter.
- Add salt, pepper and garlic salt, then tomato sauce.
- Simmer for 5 minutes.
- Combine cottage cheese, sour cream, chopped onion and noodles.
- Alternate layers of noodle mixture and meat mixture in a 2-quart casserole, beginning with noodles and ending with meat.
- Top with shredded Cheddar cheese.
- Bake at 350 degrees for 25 to 30 minutes or until cheese is melted and browned.

- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water until tender yet firm to the bite, 6 to 8 minutes. Drain and toss with melted butter. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with butter.
- Beat eggs, sour cream, and cottage cheese together in a bowl until well blended. Add Parmesan cheese, onion, parsley, garlic powder, salt, and pepper and beat until thoroughly mixed. Add cooked egg noodles and toss to mix well. Transfer mixture to the prepared casserole dish.
- Bake in the preheated oven until heated through, about 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C).

I love this recipe as a simple, country style, casserole, especially since it freezes so well. My mom used to make this all of the time, for that reason, and it was one of the first recipies that I learned to cook as a teen.

- Prepare noodles as directed on package. (This usually takes about 8 minutes).
- While the noodles are boiling, sautee onions and garlic over medium heat with the coconut oil until tender. (I personally use coconut oil for almost anything, but if you do not have it, any oil or butter will do.)
- Also during this time, microwave the frozen peas and carrots in a bowl for 2-3 minutes until thawed.
- Cube the chicken into bite sized pieces and add to the onion and garlic mixture in the pan. Sautee together until mixed. Remove from heat.
- In a bowl, combine the cream of chicken soup, sour cream, and milk. Stir in the ranch dressing mix, salt, and pepper.
- Drain the cooked noodles and pour into a 13X9X2 baking dish. Add the chicken and onion mixture, soup mixture, and peas and carrots. Mix well.
- Top casserole with the shredded cheese.
- Bake in a 350 degree oven for about 30 minutes or until cheese and sauce is bubbly.
