1 can (16 oz) Old El Paso™ refried beans
1 package (1 oz) Old El Paso™ taco seasoning mix
1 package (8 oz) cream cheese, softened
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup Old El Paso™ Thick 'n Chunky salsa (any variety)
2 cups shredded lettuce
2 cups shredded Cheddar or Mexican cheese blend (8 oz)
1 can (2.25 oz) sliced ripe olives, drained (1/2 cup)
1 medium tomato, diced (3/4 cup)
Food Should Taste Good™ blue corn tortilla chips, as desired

Steps:

In medium bowl, mix refried beans and taco seasoning mix. Spread mixture on large platter.
In another medium bowl, mix cream cheese and chiles. Carefully spread over bean mixture.
Top with salsa, lettuce, cheese, olives and tomato. Refrigerate until serving time. Serve with tortilla chips.

Ingredients

3 medium ripe avocados, peeled, cored, mashed
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup mayonnaise
1 cup sour cream
taco seasoning mix
2 (8 ounce) cans bean dip
2 medium tomatoes, chopped
1 bunch green onion, chopped
1 (3 ounce) can black olives (sliced or chopped)
1 (8 ounce) package shredded cheddar cheese

Steps:

Mix avocados, lemon juice, salt, and pepper.
Mix mayonnaise, sour cream, and taco seasoning mix.
Layer ingredients as follows.
Bottom layer: Bean Dip.
Second layer: Avocado mixture.
Third layer: Sour cream mixture.
Fourth layer: Tomatoes.
Fifth layer: Onions.
Sixth layer: Olives.
Seventh layer: Cheese (I like to use Colby Jack cheese).
Top with extra sour cream/olives/salsa, etc. if desired.
Serve with tortilla chips.
**This seems to be a little bit better if you can chill it for a few hours or over night to let the flavors intensify**.

1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 pound ground beef
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt
ground black pepper to taste
1 (30 ounce) can refried beans
1 (16 ounce) jar salsa
1 (16 ounce) jar salsa con queso
2 cups shredded Mexican cheese blend
1 plum tomato, chopped
1 (6 ounce) can sliced black olives, drained
3 green onions, chopped

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Mix sour cream, cream cheese, and taco seasoning mix together in a bowl.
Heat a large skillet over medium-high heat. Cook and stir beef with the cumin, oregano, garlic powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
Spread refried beans into the bottom of a 9x13-inch baking dish. Layer ground beef mixture over refried beans, lightly pressing beef into beans; top with sour cream mixture.
Stir salsa and salsa con queso together in a bowl; pour over sour cream mixture layer. Spread Mexican cheese blend, tomato, olives, and green onions, respectively, over sour cream mixture layer.
Bake in the preheated oven until heated through and bubbling, about 30 minutes.

Ingredients

4 tablespoons safflower oil
1 cup plus 2 tablespoons chopped onion (from 1 medium onion)
4 garlic cloves, minced
2 cans (15 1/2 ounces each) pinto beans, drained, liquid reserved
2 medium tomatoes, finely chopped
1/2 teaspoon coarse salt
2 ripe avocados, halved, pitted, and peeled
1 to 2 pickled jalapeno chiles, minced
1 cup plus 2 tablespoons sour cream
2 tablespoons fresh lemon juice
3 ounces cheddar cheese, grated (1 cup)
6 scallions, thinly sliced
6 ounces pitted black olives, chopped
1 to 2 bags tortilla chips, for serving

Steps:

Heat oil in a large pan. Add 1 cup onion and the garlic, and cook over low heat until translucent, about 2 minutes. Stir in beans, and cook for 3 minutes. Roughly mash with the back of a spoon, adding reserved liquid as needed to attain desired consistency.
Mix tomatoes with remaining 2 tablespoons onion and the salt. Mash avocados with jalapenos, 2 tablespoons sour cream, and the lemon juice.
Spread 1/2 inch mashed beans into bottom of each jar. Top with 2 tablespoons cheddar, 1 tablespoon scallions, 1/4 cup tomato mixture, 3 tablespoons avocado mixture, 2 tablespoons sour cream, then 2 1/2 tablespoons olives. (Alternatively, layer all ingredients in a large bowl.) Serve with chips.

My brother and I make this all the time when people come over, and its usually the first thing gone. Its a fairly straightforward layered bean dip that you can throw together in minutes with readily available ingredients. Truth be told, if you count there are only 6-layers to this dish, the original recipe called for a layer of salsa and a layer of onions, we've combined and simplified (and bettered in my opinion) these two layers with pico de gallo. But since nobody has really questioned it, we've never called it anything else.

1 (8 ounce) can refried beans
1 (1 1/4 ounce) package taco seasoning
1 (8 ounce) package sour cream
1 (16 ounce) package cream cheese
1 bell pepper
1 bunch green onion
1 (8 ounce) package Mexican blend cheese
16 ounces pico de gallo
1 (8 ounce) bag lettuce (shredded)
1 (13 ounce) bag tortilla chips

Steps:

Mix together the re-fried beans and taco seasoning and spread evenly in a 9" x 13" baking dish (or similarly sized serving dish).
Mix together the sour cream and cream cheese and spread over-top beans.
Add the next layers: pico de gallo, shredded lettuce & cheese.
Garnish the dish with chopped green onion and bell pepper and serve with a large bowl of chips.

Remove 1 cup salsa and place in a fine-mesh sieve over the sink to drain. This will keep the dip from getting soggy. Stir remaining salsa and refried beans together and spread mixture in an 8x8 or 9x9-inch casserole dish or a 2-quart baking dish.
Top with guacamole. Stir together sour cream and seasoning mix in a small bowl. Spread over the guacamole layer.
Top evenly with layers of the remaining (strained) salsa, cheese, olives, green onions and/or cilantro. Cover and chill for 30 minutes to 2 hours before serving. Serve with tortilla chips. :)
