4 cups sugar
1 cup sour cream
2/3 cup light corn syrup
1/4 cup butter
1/2 teaspoon salt
1 tablespoon vanilla extract
1 cup chopped peanuts
2/3 cup peanut butter

Steps:

  • In a large saucepan, combine the first five ingredients; bring to a boil. Cover and simmer for 5 minutes. , Uncover; cook over medium-high heat until a candy thermometer reads 238° (soft-ball stage). Remove from the heat; stir in vanilla. Let stand, without stirring, for 15 minutes. , Add peanuts and peanut butter. With a wooden spoon, beat until thick and creamy, about 10 minutes. Transfer to a buttered 13-in. x 9-in. pan. Cool; cut into squares. Store in the refrigerator.

2 tablespoons unsalted butter, chilled, plus more for pan
3 tablespoons light corn syrup
1 cup granulated sugar
3/4 cup packed light-brown sugar
3/4 cup milk
1/2 teaspoon salt
Pinch baking soda
6 tablespoons creamy peanut butter
1 teaspoon pure vanilla extract

Steps:

  • Lightly butter an 8 by 8 by 2-inch pan and line bottom with parchment paper or plastic wrap; set aside. In a medium heavy-bottomed saucepan, combine corn syrup, both sugars, milk, salt, and baking soda. Bring to a boil over medium-high heat, stirring occasionally. Insert a candy thermometer. Cook, stirring frequently, until temperature registers 236 degrees F (just below soft-ball stage); don't overcook.
  • Immediately remove saucepan from heat, stir in the chilled butter, then the peanut butter and vanilla until smooth. Pour mixture into prepared pan. Set aside in a cool, dry place, and let fudge set.
  • Before the fudge cools completely, cut into desired shapes. Set shapes aside to cool completely. Store fudge in an airtight container up to 1 week.

With a smooth texture and lots of nutty flavor, the fudge is sure to get smiles from peanut butter lovers of all ages. Note: Reduced fat or generic peanut butter is not recommended. I plan to use Splenda for baking in place of the sugar.

2 cups white sugar
1 cup sour cream
2 tablespoons light corn syrup
½ teaspoon salt
2 tablespoons butter
1 teaspoon vanilla extract
½ cup chopped candied cherries
½ cup chopped walnuts

Steps:

  • Butter an 8-inch square pan.
  • Butter the sides of a heavy, 2-quart saucepan; add sugar, sour cream, corn syrup, and salt. Cook, stirring constantly, over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and cook until mixture comes to a boil. Cook, stirring occasionally, until mixture reaches 239 degrees F (115 degrees C) or until a small amount of sugar mixture dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove saucepan from heat.
  • Stir butter and vanilla extract into sugar mixture and cool to lukewarm, about 110 degrees F (43 degrees C). Beat mixture vigorously until fudge is creamy and no longer glossy. Fold cherries and walnuts into fudge; pour into the prepared 8-inch pan. Allow to cool until hardened, at least 1 hour.
