RUM AND TONIC



Rum and Tonic image

There's nothing wrong with a gin and tonic, but a rum and tonic is a sweeter, deeper surprise.

Yield 1 drink

Number Of Ingredients 4

2 to 3 ounces dark rum
Squeeze of lime juice
Tonic water, to top
Lime wedge, for garnish

Steps:

  • Fill a highball glass with ice and add rum and lime juice. Top with tonic water. Garnish with a wedge of lime.

Americano image

The Negroni is enjoying a moment now. For bartenders and barflies, this deliciously complex mix of Campari, gin and sweet vermouth has become an easy way to fly one's flag as a knowing cocktail classicist. But the drink's rising profile has cast a shadow over its once-popular progenitor, the Americano. Without this refreshing Italian-born highball - Campari, sweet vermouth and club soda - there would have been no blueprint for the gin-loving Count Camillo Negroni to experiment with a century ago. (The drink's family line actually goes back even farther; the Americano grew out of a simpler aperitif that omitted the soda, called the Milano-Torino - Milano in honor of the birthplace of Campari, Torino for the vermouth.) While the Americano doesn't have quite the romance that's grown around the Negroni, it also doesn't have nearly as much alcohol. It's a lighter and saner choice for summertime drinking. A pitcher of Americanos enjoyed on the back patio during a hot afternoon will not leave you down for the, uh, count.

Orange twist, for garnish

Steps:

  • Combine 1 1/2 ounces Campari with 1 1/2 ounces sweet vermouth in a highball glass filled with ice. Top with club soda. Garnish with a generous orange twist.

AUTUMN BONFIRE

My Scotch-whisky-inflected alternative to a Jack Rose.

Number Of Ingredients 5

1 oz. nonalcoholic apple cider or juice
1 oz. applejack
1 oz. smoky Scottish whisky (I like Bowmore 12)
1 scant teaspoon maple syrup
2 dashes bitters (I prefer Brooklyn Hemispherical Black Mission Fig, but Angostura works, too).

Steps:

  • Combine all ingredients in a mixing glass with ice. Stir for 30 seconds. Strain into a cocktail glass (or serve over fresh ice in a rocks glass). Garnish with an apple fan or a slice of apple.

This tiki drink, believed to have been invented at the Kuala Lumpur Hilton in 1978, has recently lurched from obscurity to ubiquity. It is a favorite among mixologists, and a natural for home bartenders, because it contains only five ingredients: rum, Campari, pineapple and lime juices and simple syrup. The New York bartender Giuseppe Gonzalez tweaked the original, replacing dark Jamaica rum with the more intense blackstrap rum.

1/2 ounce simple syrup (see note)
1 1/2 ounces blackstrap rum, preferably Cruzan
3/4 ounce Campari
1 1/2 ounces pineapple juice, fresh or a high-quality brand
1/2 ounce fresh lime juice
Pineapple wedge, for garnish

Steps:

  • In a mixing glass three-quarters filled with ice, pour 1/2 ounce of simple syrup, the rum, the Campari, the pineapple juice and the lime juice. Shake until chilled, about 30 seconds. Strain into a rocks glass over one large piece of ice. Top with pineapple wedge.

3 dashes Fee Brothers Grapefruit Bitters
1/2 ounces Morris Kitchen Preserved Lemon Syrup
2 ounces Lillet Blanc
1 ounce cognac

Steps:

  • In a mixing glass, muddle the grapefruit with the bitters.
  • Fill with ice, add the other ingredients and shake vigorously.
  • Strain into a chilled coupe
  • Garnish with a grapefruit twist
