SOUS VIDE CAJUN BONELESS CHICKEN BREAST WITH CREAMY PAN SAUCE

Sous Vide Cajun Boneless Chicken Breast with Creamy Pan Sauce image

Flavorful Cajun seasoning, cream, and Parmesan cheese are the stars in this dish, as is the incredibly juicy chicken that results from cooking sous vide. Traditionally you need to cook chicken to 165 degrees F (74 degrees C) or until no longer pink, however with sous vide cooking, you can achieve the same safety with extended cooking time at lower temperatures. Using an ice bath will lower the chicken temperature slightly, so that it does not overcook during the searing step. If you prefer a lot of sauce, double the sauce ingredients.

Provided by France C

Time 1h25m

Yield 4

Number Of Ingredients 12

4 (6 ounce) skinless, boneless chicken breast halves
4 teaspoons Cajun seasoning
1 tablespoon butter
1 tablespoon avocado oil
1 tablespoon butter
2 cloves garlic, minced
¾ cup unsalted chicken broth
¼ cup heavy cream
¼ teaspoon freshly cracked black pepper
2 tablespoons grated Parmesan cheese
salt to taste
1 tablespoon minced fresh thyme

Steps:

  • Fill a large pot with water and place a sous vide cooker into the water. Set temperature to 140 degrees F (60 degrees C) according to manufacturer's directions.
  • Pound chicken breasts with a meat mallet to an even 3/4- to 1-inch thickness. Season both sides with Cajun seasoning. Place chicken into vacuum bags and seal using a vacuum sealer.
  • Lower bags into the water, making sure they are fully submerged, and set timer for 1 hour. When timer is up, remove chicken from water and immediately place into an ice bath for 5 minutes. Remove chicken from bag and pat completely dry with paper towels.
  • Heat 1 tablespoon of butter and avocado oil in a large skillet over high heat until just smoking. Sear chicken for 30 to 45 seconds per side, moving the chicken around in the skillet to get all sides evenly browned. Remove to a plate and cover with foil to keep warm.
  • Melt butter for sauce in the same skillet over medium heat. Add garlic and saute until fragrant, 15 to 30 seconds. Whisk in chicken broth and bring to a simmer. Cook until slightly reduced down, 3 to 4 minutes. Whisk in heavy cream and black pepper and return to a light simmer. Cook, whisking continually, until thickened. Stir in Parmesan cheese, 1 tablespoon at a time, until melted and combined. Taste sauce and adjust salt, if needed. Sprinkle in thyme and drizzle sauce over chicken.

SOUS VIDE WHOLE CHICKEN RECIPE - (4/5)

Sous Vide Whole Chicken Recipe - (4/5) image

Provided by JimMac

Number Of Ingredients 14

1.2kg free-range chicken
1 litre chicken stock
400g of baby onions, peeled
250g of new potatoes, washed
2 garlic cloves
180g of carrots, peeled
100g of dried shiitake mushrooms, soaked and drained, reserve liquid
1 tbsp of Dijon mustard
1 sprig of thyme
2 bay leaves
50ml of cream
salt
pepper
chives

Steps:

  • 1 Start by preparing the sous vide (water bath): add water to it and set the temperature, in this case 85°C, cook the vegetables first 2 While waiting for the water to reach the desired temperature, prepare the chicken and vegetables 3 Add whole trussed chicken (tied up so it holds together in the pouch while poaching), the chicken stock, half of the baby onions, mushroom and its stock, garlic, bay leaves, thyme, mustard, salt and pepper, seal the pouch. Reserve 4 In a separate pouch add the carrots, potatoes and the rest of baby onions, salt and pepper and seal 5 By now the sous vide should be ready at 85°C, if not wait and when ready place the carrot and potatoes pouch into the sous vide for 1 hour. Reserve 6 Lower the sous vide temperature to 62°C, when it reaches the desired temperature, place the chicken pouch in to the machine for 7 hours. In the last 20 minutes add the vegetable pouch to finish off cooking and re-heating 7 Preheat the grill to 250°C, remove the vegetable pouch, set aside. Remove the chicken pouch from bath and sieve the contents. Reserve the mushroom and onions. Place the broth in to a pan and simmer it by half 8 Untie the chicken and place it in a heat proof dish and under the grill for 5 minutes 9 By now the broth should be ready, add a knob of butter to achieve a shiny gravy 10 For the onion purée: add the onions (sous vide with the chicken) 2 tablespoons of chicken broth and cream into a blender, mix well, check for salt and pepper 11 Serve: vegetables around the sous vide whole chicken, place the onion purée in a separate dish. Enjoy
