AGUAS FRESCAS (MEXICAN FRUIT COOLERS)

Aguas frescas, water-based fruit drinks, are a cool way to make your fresh fruit go further. Try this recipe with watermelon, mango, or whatever you have.

Number Of Ingredients 5

½ cup sugar
4 cups water
4 cups chopped fruit (watermelon, cantaloupe, pineapple, papaya, strawberries, oranges, peaches, mangoes, or any combination)
Ice cubes
Lemon or lime wedges (optional)

Steps:

  • Stir the sugar and water together in a large pitcher until the sugar dissolves. Measure out 1 cup. Puree the fruit and the 1 cup sugar water in a blender. Pour the mixture through a fine-mesh strainer back into the pitcher with the sugar water, mashing with a whisk or wooden spoon to eliminate any pulp.
  • Taste and add more sugar, if desired. Serve over ice, with a lemon or lime wedge, if desired.

2 cups diced fruit (pineapple, papaya, mango, berries etc- peeled, de-seeded, hulled if required)
2 lemons or 2 limes, juice of
2 cups cold water (or ice water)
4 tablespoons caster sugar (more or less, add to taste)
1 cup crushed ice

Steps:

  • Place all the ingredients in a liquidizer & blend until completely smooth.
  • Add more sugar if you like --
  • Serve immediately in tall glasses.

1 (6 ounce) can frozen concentrated lemonade, thawed
3 (6 ounce) cans frozen concentrated orange juice, thawed
1 teaspoon vanilla
1 teaspoon almond extract

Steps:

  • On low heat, dissolve sugar in water.
  • In a gallon container, add sugar mixture to lemonade and orange juice concentrates along with vanilla and almond extracts.
  • Fill container to top with water and mix well.
  • When ready to serve, pour into cups and microwave until hot taking care not to boil.

1 large fresh pineapple
1/2 teaspoon whole cloves
1 cup sugar
1 stalk gingerroot, peeled (about 6-inch cut in thirds)
8 cups boiling water

Steps:

  • Slice pineapple, the peel, the core and all, into thin slices.
  • Combine the sliced pineapple with the cloves, sugar and ginger in a bowl large enough to hold the water.
  • Pour the boiling water over the mixture and stir.
  • Cover and refrigerate for at least 12 hours and up to a day.
  • When ready to serve, strain into a pitcher, discarding the pineapple solids and spices.

  • You can make the mojitos in individual glasses or in a pitcher. I make them in a pitcher and only add a bit of sparkling water. Then in each glass, I place ice cubes, mint leaves and fruit slices, pour the drink into the glasses and then top it off with some sparkling water.
  • Add the rum, lime juice, and mandarin juice, mix well and taste. Add sugar or rum if needed – remember than you will still add sparkling water. Add a few ice cubes and some mandarin slices. Then top off with the sparkling water and mix gently.
  • As mentioned above, to serve in each individual glass: put ice cube in the glass, then add some fresh mint leaves and mandarin slices, and pour the drink into the glasses. Top off with additional sparkling water or club soda if needed.
