THE RIGHT WAY TO COOK GREENS!

The RIGHT WAY To Cook Greens! image

There's a short way and a long way, so no excuses will be accepted for tough, bitter greens!

Provided by rjkuns

Categories     Side Dish     Vegetables     Greens

Time 20m

Yield 4

Number Of Ingredients 4

¼ cup bacon drippings
4 bunches collard greens, tough stems removed
salt to taste
3 cups water

Steps:

  • Heat bacon drippings in a cast-iron skillet over medium heat. Add the greens. Stir-fry, I suppose, since you are stirring and frying, for 1 to 4 minutes (depends on how tough the greens are) or until greens are limp, tender, and have greatly reduced in size. Pork fat is good because it helps cover the bitterness of greens while bringing out their great flavor.
  • At this point, you have a choice. Either serve them straight from the pan with a sprinkling of salt, or add 3 to 4 cups of water and salt to taste, and boil the greens 1 hour for extra tender, probably-won't-even-have-to-chew greens. If you don't have teeth, clearly you see which way to go here.

SOUTHERN GREENS

Southern Greens image

How one cooks greens says much about where and how a Southerner grew up. Seasoning, length of cooking time and how to tenderize older greens are often points of debate. Here, the Yankee food writer Amanda Hesser traveled to Georgia and brought back a version that combines the bite of mustard greens with the vegetal heartiness of collards and gives them both depth with ham hocks. Her trick for melding the flavors is a bit of sugar, which is a nice

Time 3h15m

Yield 6 servings

Number Of Ingredients 6

Salt
2 pounds turnip greens, stems removed
2 pounds mustard greens, stems removed
2 to 3 pounds smoked ham hocks
2 tablespoons vegetable shortening
3 tablespoons sugar

Steps:

  • In a large pot, bring 3 quarts water to a full boil. Season lightly with salt. Gradually add greens in batches, allowing each batch to wilt before adding the next. Add ham hocks, shortening and sugar, and stir well.
  • Reduce heat to medium-low. Cover pot partway, and cook at a lively simmer for 3 hours. Stir occasionally. By the end of cooking, there should be little liquid left in pot. Add salt to taste. Remove ham hocks. Pick out ham, and return to pot; discard bones. Serve hot.

SOUTHERN BROCCOLI SALAD

Southern Broccoli Salad image

A classic sweet and savory Southern broccoli salad combines raw (or barely cooked) broccoli with sweet dried fruit (typically raisins or cranberries), crunchy sunflower seeds and savory Cheddar in a creamy, tangy mayonnaise dressing. Briefly blanching the broccoli in boiling water ensures bright green veggies with a crisp-tender texture. The salad gets better with time, so make it a few hours ahead and refrigerate it. (Reserve the crispy bacon and sprinkle it on top right before serving.) And, if your tastes skew sweet, further increase the sugar by another tablespoon.

Provided by Kay Chun

Categories     dinner, lunch, salads and dressings, side dish

Time 15m

Yield 8 to 10 servings

Number Of Ingredients 10

Kosher salt (such as Diamond Crystal) and pepper
8 ounces bacon (any type)
10 cups (1 1/2 pounds) 1- to 1½-inch broccoli florets
1 cup mayonnaise
1/4 cup finely chopped red onion
2 tablespoons apple cider vinegar
1 tablespoon granulated sugar
1 cup coarsely grated Cheddar
1/2 cup golden raisins
1/2 cup roasted, salted sunflower seeds

Steps:

  • Bring a large saucepan of salted water to a boil.
  • Heat a large nonstick skillet over medium. Add bacon and cook, turning occasionally, until golden and crispy, 7 to 8 minutes. Transfer to a paper towel-lined plate to drain; discard bacon fat or reserve for another use. Chop the bacon into bite-size pieces.
  • Meanwhile, add broccoli to boiling water and cook until bright green, 1 minute. Rinse under cold water until cool (or transfer to an ice bath). Drain broccoli well and pat dry.
  • In a large bowl, combine mayonnaise, onion, vinegar and sugar and mix well. Add the broccoli, cheese, raisins and sunflower seeds. Season with salt and pepper, and toss until well combined. (If time allows, refrigerate for 30 minutes to 3 hours to allow flavors to meld, stirring occasionally.)
  • Transfer broccoli salad to a serving bowl or platter. Top with bacon. Salad can be served immediately, or refrigerated and served chilled.
