This creamy, cheesy Southern classic casserole can be served with breakfast, brunch or dinner. You'll need frozen diced potatoes, cheddar cheese, onion and cream of chicken soup. Perfect for the holidays!

2 lbs frozen diced potatoes
4 cups grated cheddar cheese
1 (10 oz) can cream of chicken soup
2 cups sour cream
1/2 cup melted butter
1 medium chopped onion
2 teaspoons Paula Deen House Seasoning

Steps:

  • Preheat oven to 400 °F.
  • In a large bowl, combine the diced potatoes, 2 cups of the cheddar, cream of chicken soup, sour cream, butter, onion and House Seasoning.
  • Place in a buttered 9×13-inch pan and bake for 35 minutes. Remove from the oven and top with remaining cheddar. Return to the oven and bake for 10 minutes longer.

1/2 pint sour cream
10 1/2 ounces cream of chicken soup
1 egg, beaten
2 cups shredded cheddar cheese, divided
2 cups crushed Ritz crackers, divided
1 medium onion, diced
salt
pepper
5 slices of cooked crumbled bacon
1 cup butter, melted

Steps:

  • Preheat oven to 350.
  • Mix sour cream, egg, chicken soup, onion, 1 cup cheese and one stick of melted butter in a bowl.
  • Combine with hashbrowns.
  • Mix in 1 cup crushed crackers and crumbed bacon.
  • Spread in a 9 x 13 pan.
  • Sprinkle remaining cheese over top.
  • Mix remaining butter and cracker crumbs and spread over top of casserole.
  • Cover with foil and bake 45 mins or until bubbly.

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch pan with non-stick cooking spray.

2 (10.75 ounce) cans condensed cream of chicken soup
1 ½ cups sour cream
2 tablespoons butter, softened
2 tablespoons dried minced onion flakes
ground black pepper to taste
1 (2 pound) package frozen shredded hash brown potatoes, thawed
4 ounces extra sharp Cheddar cheese, shredded
½ cup crushed cornflakes cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, mix together the soup, sour cream, butter, dried onion flakes, and pepper. Stir in the hash browns and 1/2 the cheese. Pour into the prepared baking dish, sprinkle with remaining cheese, and top with crushed cornflakes.
  • Bake 45 minutes in the preheated oven, or until cheese is melted and bubbly.

1 bag of frozen hash brown potatoes (2 lbs)
2 cups shredded cheddar cheese
½ cup melted butter
1 ½ tsp salt
1 small onion (chopped)
1 can 10 ¾ oz cream soup (cream of chicken or cream of mushroom work very well)
1 cup sour cream
2 cups crushed Corn Flakes
¼ cup melted butter

Steps:

  • As mentioned above, thaw hash browns (or use refrigerator style hash browns). In a large bowl, mix together hash browns, cheddar cheese, ½ cup melted butter, salt, onion, soup, and sour cream. Stir until evenly mixed. Spray a 9 x 11 or 9 x 13 inch pan or casserole dish with Pam or lightly grease the dish. This helps on clean up. Pour mixture from bowl into pan and spread evenly with a spoon. Do not pack down tightly. In a small bowl, mix together Corn Flakes and ¼ cup melted butter. Mix together and spread on top of casserole. Bake at 350 degrees F for 45 minutes without a lid. The top should be lightly browned when done.
