SOUTHERN-STYLE CANNED GREEN BEANS RECIPE (SWEET AND SOUR)
Sweet and Sour Green Beans made with canned green beans, smokey bacon, crunchy water chestnuts, and sweet onions, are a little bit sweet, a little bit sour, and a whole lot of delicious, bite after bite! It's also one of those classic dishes that you will turn to time and time again when you want a special vegetable side dish.

Steps:
- Preheat the oven to 350 degrees F.
- Pan-fry the bacon in a large oven-safe saute pan over medium-low heat and frequently turn for about 10 minutes or until it is browned and crispy. Remove from the pan and drain on paper towels. Leave the drippings in the pan.
- Add sugar and vinegar and stir until everything is well combined. Add the onions and cook for 15 minutes.
- Add two cans of green beans, one drained and one not drained, and add the can of drained sliced water chestnuts. Combine and simmer for 5 minutes.
- Crumble the bacon and add it to the green bean mixture - cover and bake for 30 minutes.
- Serve immediately!

Steps:
- Cut bacon into chunks, and cook over medium until the fat is rendered out and the bacon is crispy.
- Remove the bacon pieces to a bowl, leaving behind the bacon grease.
- Saute the onions in the bacon fat until soft; add vinegar, sugar and undrained green beans.
- Simmer for 15 minutes.
- Top with cooked bacon.

- Pour vinegar and 3/4 cup of the reserved green bean liquid into the pan. Add sugar, salt, and pepper, and stir to combine. Bring to a boil, reduce to a simmer, and stir in the green beans. Continue cooking at a low simmer until beans are hot.

Steps:
- Place green beans in a microwave-safe bowl and add enough water to make a layer in the bottom; heat in microwave until green beans are tender yet firm to the bite, 1 to 3 minutes. Drain.
- Heat peanut oil in a large wok or skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Transfer onion to a bowl and discard any remaining oil.
- Place the bacon in the wok or skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and cut into bite-size pieces. Reserve 4 to 5 tablespoons bacon drippings in the wok.
- Mix onion, brown sugar, vinegar, and liquid smoke in the reserved bacon drippings; cook and stir until sauce is bubbling and brown sugar is dissolved, about 5 minutes. Add green beans to sauce and stir to coat; cook until green beans are heated through, 2 to 3 minutes.

SOUTHERN STYLE SEASONED GREEN BEANS (FROM CANNED)
A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

Steps:
- Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
- Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
- Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
- Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
- Serve and enjoy.
- NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.
