SOUTHERN STYLE COLE SLAW

1 medium head green cabbage (about 2-3 lbs) (cored and chopped)
1 medium carrot (chopped)
3 medium green onions (chopped)
1 cup real mayonnaise
1/3 cup granulated sugar ((Or, equivalent of sugar free sweetener))
1/3 cup buttermilk
3 Tbsp apple cider vinegar
1 tsp salt
1 1/2 tsp celery seeds
1/2 tsp lemon pepper ((may use black pepper and fresh lemon juice))
1/2 tsp onion powder
1/2 tsp granulated garlic or garlic powder
1/4 tsp ground mustard

Steps:

  • In a large mixing bowl, toss together cabbage, carrot and green onion.
  • In a separate bowl, whisk together mayonnaise, sugar, buttermilk, vinegar, salt, celery seeds, lemon pepper, onion powder, garlic and mustard.
  • Pour dressing over cabbage, mix until fully blended.
  • Chill in an airtight container for at least 6 hours prior to serving garnished with green onion and additional celery seeds, if desired.

PORK
½ higher-welfare pork shoulder, neck end with bone in (5kg)
olive oil
2 heaped teaspoons smoked paprika, plus extra for sprinkling
½ a bunch of fresh mint
1-2 fresh red chillies
6 tablespoons olive oil
3 tablespoons red wine vinegar
COLLARD GREENS & APPLE SLAW
½ a white cabbage
1 red onion
3 carrots
2 big handfuls collard greens or spring cabbage
3 crunchy eating apples
2 tablespoons free-range mayonnaise
extra virgin olive oil
cayenne pepper
4-5 tablespoons red wine vinegar

Steps:

  • Preheat the oven to full whack.
  • Score the pork skin about 1cm deep all over with a sharp knife. Drizzle a little olive oil over the pork and season generously with sea salt, black pepper and the paprika.
  • Rub the flavours all over the skin, then place your pork in a roasting tray in the middle of the oven and immediately turn the temperature down to 160ºC/320ºF/gas 3.
  • Cook for about 4 hours, basting occasionally with the juices from the tray, then turn the oven down to 150ºC/300ºF/gas 2 and continue to cook for another 2 hours, or until you can pull the meat apart really easily.
  • Remove the crackling and put it to one side, then remove any fat from the tray. Pull all the pork apart, discarding any bones and fat as you go, and use 2 forks to break the meat into small- and medium-sized pieces. Cover with foil until needed.
  • To make the coleslaw, finely slice all the veg (peeling and trimming first, if necessary) or use a food processor or box grater, then very finely slice the apples. Put them into a large bowl and season with a pinch of salt and pepper.
  • Add the mayonnaise, a drizzle of extra virgin olive oil, a pinch of cayenne and the red wine vinegar. Mix everything together until you've got a perfect coleslaw texture. Taste and season to perfection.
  • Pick the mint leaves and finely chop them on a large board. Deseed and finely chop the chilli. Drizzle the olive oil and red wine vinegar all over the chilli and mint and add a good pinch of salt. Add this to the tray of pulled pork and mix it all together.
  • Serve the dressed pork in a pile on to a plate next to some crackling and a good portion of that wonderful coleslaw. Finish the whole plate off with a little salt and a hit of paprika and tuck in with a lovely cold beer.

2 tablespoons paprika
1 tablespoon brown sugar
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon sugar
1 1/2 teaspoons black pepper
2 teaspoons salt
1 teaspoon ground red pepper
1 (4 -5 lb) boneless pork shoulder
3/4 cup apple cider vinegar
3/4 cup white vinegar
2 tablespoons sugar
1 teaspoon red pepper flakes
1 teaspoon hot pepper sauce
1 dash salt and pepper

Steps:

  • Combine all the spices to form a dry rub and press into all surfaces of the pork roast.
  • Grill over low heat or in oven preheated to 225 for two and half to three hours. It should be about 170 degrees in the center. Let stand for ten minutes after you remove it from the grill or oven.
  • Shred the pork into pieces with two forks.
  • Mix in plenty of the vinegar sauce.

Just made this one for dinner tonight. I made it a few weeks ago and my husband requested a repeat. The funny part is that he hates to eat pork, and he doesn't even realize he is eating sweet potatoes. He is a very picky eater so when he requests something that tastes this good I can't wait to make it for him. This is another of my accidental recipes that worked out beautiful. I was planning on preparing beef stew for a luncheon I was attending the next day. To my surprise the steaks I had bought to make it with were missing. So in a last minute panic I decided to use pork as a substitute and prayed for the best. Wow, I got lucky it was one of those mistakes that just so happens to melt in your mouth... I just kept getting requests for my recipe of Good Ol' Souther Pork Stew. I hope you enjoy this as we have. The funny part is I make my beef stew the same way just with beef instead of pork. I like to use the crock pot for this recipe. Its great to just throw in the pot in the morning and then come home to it after a long day.

4 -6 boneless pork chops (can substitute with boneless pork tenderloin but be sure it has just a little fat on it for the flav)
1 (10 1/2 ounce) can of campbell's beef broth (double rich variety is best)
5 beef bouillon cubes
4 medium potatoes (scrubbed, but I leave the skin on for their nutritional value and cut into chunks)
1 large sweet potato (peeled and cut into chunks)
4 large carrots (washed and cut into chunks)
yellow sweet onion (I just quarter mine, we like the large pieces)
1/2 cup butter (cut into chunks)
1 tablespoon garlic powder
1 teaspoon onion powder
2 tablespoons basil leaves (crushed)
1/3 cup red wine vinegar
3 -4 cups water
salt and pepper

Steps:

  • I like to use my crock pot for this recipe. I know it can easily be converted to a large pot on the stove. I am giving the prep and cook time for a crock pot. My family eats this with corn bread it was just made to go together. You can use crackers but trust me the corn bread is perfect with it.
  • Place beef broth, boullion cubes, boneless pork chops, vegetables, vinegar, and spices into the crock pot. Topping it off with the water and then the chunks of butter. Put the lid on and walk away.
  • Turn the crock pot to high and cook for approximately 5 hours, longer if your not going to be home that soon it won't hurt it.

2 cans (4 ounces each) chopped green chilies
1 can (8 ounces) tomato sauce
1 cup barbecue sauce
1 large sweet onion, thinly sliced
1/4 cup chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 boneless pork loin roast (2 to 2-1/2 pounds)
Flour tortillas
TOPPINGS:
Sour cream, shredded lettuce and chopped tomatoes, optional

Steps:

  • In a 3-qt. slow cooker, combine the chilies, tomato sauce, barbecue sauce, onion, chili powder, cumin and oregano. Cut pork in half; place on top of tomato sauce mixture. Cover and cook on low for 8-9 hours or until meat is tender., Remove pork. When cool enough to handle, shred meat using two forks. Return to slow cooker and heat through. Spread on tortillas; top with sour cream, lettuce and tomatoes if desired; roll up.

Steps:

  • Combine cabbage and red onion in a large bowl.
  • Stir sugar, vinegar, vegetable oil, salt, dry mustard, and celery seed together in a saucepan. Bring to a boil; remove from heat.
