SOUTHWESTERN CASSEROLE
I've been making this mild family-pleasing southwest casserole recipe for years. It tastes wonderful, fits nicely into our budget and, best of all, makes a second one to freeze and enjoy later. -Joan Hallford, North Richland Hills, Texas

Steps:
- Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

SOUTHWEST BEEF CASSEROLE
This tasty Southwest Beef Casserole is a great comfort food to add to your repertoire. It's sure to become one of your family favorites!

Steps:
- Preheat oven to 400ºF and lightly grease a 9x13 baking dish; set aside.
- Cook the egg noodles in salted boiling water, according to the directions, about 10 minutes. Drain and set aside.
- In a large deep skillet over medium heat, add oil. When it gets hot, add onions and sauté until translucent, about 3 minutes.
- Add red and orange peppers; cook for 2 minutes. Add jalapeño peppers and sauté for another 2 minutes. Stir in garlic and sauté for 1 minute.
- Add ground beef and cook until no longer pink, breaking it up into small pieces. Halfway thru cooking, season with chili powder, taco seasoning, ground rosemary, Worcestershire sauce, cayenne pepper and garlic salt. Stir and cook until the beef is done.
- Season the beef mixture with ground sea salt, freshly ground black pepper before adding corn kernels; stir well. Add crushed tomatoes, cream of tomato soup and diced green chilies; combine well. Add brown sugar to the mixture and cook for 2 minutes.
- Add ½ cup sharp Cheddar cheese and ½ cup Monterey Jack; blend cheeses with the ingredients. Add cooked al dente egg noodles, stir and transfer the beef mixture to the prepared baking dish.
- Sprinkle the remaining cheese on top and transfer to the preheated oven. Bake for 10 minutes or until the cheese is melted.
- Remove from the heat and sprinkle with parsley.
SOUTHWESTERN-STYLE BEEF AND POTATO CASSEROLE
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- Grease a 9 x 13 x 2-inch baking pan (2 1/2- to 3-quart size).
- Heat the olive oil in a large skillet over medium heat.
- When the oil is hot and shimmering, add the ground beef, onion, and celery.
- Cook until the beef is browned and vegetables are tender, stirring frequently.
- Add the garlic and jalapeño peppers; cook about 1 minute longer, stirring frequently.
- Stir in the tomatoes, chili powder, salt, pepper, and cumin. Bring to a simmer.
- In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn, half of the ground beef mixture, and half of the cheese.
- Repeat the layers, ending with the remaining cheese.
- Cover the baking dish tightly with foil and bake for about 1 hour and 15 minutes, or until potatoes are tender.
- Serve hot and enjoy.

- Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
- Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
- Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

SOUTHWESTERN BAKE
A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
- In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
- Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
- Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

My kids and I devoured this casserole! It was amazing! I made it low carb and GF by using spaghetti squash instead of pasta. This recipe is very flexible. I added celery and mushrooms to the onions and peppers and reduced the corn by half. Next time I make this I will double the "Magic Dust" to flavour the extra ingredients. ***The spices at the end are to make the "Magic Dust" seasoning.

- Preheat oven to 325 degrees. Spray a two-quart casserole dish with cooking spray.
- In large skillet brown ground beef with onions, bell pepper and red pepper flakes. Season with Magic Dust or steak seasoning.
- Add the tomato sauce, diced tomatoes, oregano and chili powder and bring to a gentle boil.
- Reduce heat and simmer for 15-20 minutes.
- Add the frozen corn and simmer for a few more minutes. Remove from heat and stir in the 2 ounces of cheese until melted.
- Gently stir in the cooked pasta.
- Pour everything into prepared casserole dish and top with shredded cheese.
- Bake uncovered for 20-30 minutes, or until browned and bubbly.
- Garnish with green onions if desired.
- To make Magic Dust:.
- Mix everything together and store in an airtight container. Keep some on a shaker bottle for the grill!

SOUTHWESTERN BEEF-AND-PASTA CASSEROLE
This is a deliciously cheesy pasta casserole. If you can't find mini penne pasta in your grocery store, you can use small shell pasta or regular penne instead. I like to use "Recipe#111347" for the alfredo sauce.

Steps:
- Preheat oven to 350 degrees.
- Cook pasta according to package directions; drain.
- Meanwhile, coat a 9-inch springform pan with cooking spray.
- In large nonstick skillet over medium-high heat, cook beef with seasoning and salt until browned.
- Stir in salsa; remove from heat.
- In large bowl, mix Alfredo sauce, eggs and 1 cup cheese; stir in pasta.
- In another bowl, toss spinach with 1/2 cup cheese.
- To assemble, spoon half of pasta mixture, about 4 cups, into pan.
- Sprinkle spinach mixture evenly over pasta.
- Top with even layer of beef mixture.
- Top with remaining pasta mixture.
- Sprinkle with remaining 1/2 cup cheese.
- Bake until hot in center and top is golden, about 1 hour.
- Run sharp knife around edge of pan to loosen pasta.
- Let stand 10 minutes.
- Remove side of pan; sprinkle with parsley.

Add the tomato sauce, diced tomatoes, oregano and chili powder. Simmer for 15 minutes, allowing flavors to blend together. Add corn and simmer for 2 more minutes. Remove from heat and gently stir in pasta and cheese. Once cheese is melted, it's ready to serve! Garnish with green onions and sour cream.
