1 (8 ounce) package cream cheese
¼ teaspoon ground cumin, or to taste

Steps:

  • Melt butter in a large saucepan over medium heat. Stir corn, diced tomatoes with green chile peppers, and cream cheese into the melted butter until smooth; season with cumin. Cook until hot, about 5 minutes.

1 cup shredded Cheddar cheese (4 ounces)
1 can (4.5 ounces) Old El Paso™ chopped green chiles, drained

Steps:

  • In medium bowl, mix all ingredients except cheese, chilies and tortilla chips. Stir in cheese and chilies.
  • Cover and refrigerate 2 to 4 hours to blend flavors. Serve with tortilla chips.

1 tablespoon chopped fresh cilantro

  • Combine all ingredients except cilantro and Soy Crisps in medium bowl; mix well.

4 cans Corn (15 Oz.), Drained
1 can Chopped Chilies (4 Oz), Drained
1 can Chopped Jalapenos (4 Oz), Drained
1 can Black Beans (15 Oz. Can), Drained And Rinsed
1 whole Red Bell Pepper, chopped
1 bunch Scallions, Chopped
1 cup Sour Cream
1 bag Finely Grated Mexican Cheese (8 Oz)
1/2 bunches Fresh Cilantro, Coarsely Chopped (or To Taste)

Steps:

  • Drain corn, chilies and jalapenos. Put in a large bowl with the beans and tilt the bowl on its side while you chop the other veggies. Add the rest of the veggies and drain - there will be liquid accumulated in the bowl. Stir in the sour cream and grated cheese. Add the cilantro last. Refrigerate before serving if you have time and the self-control to keep from eating it. You must eat this dip with Fritos Scoops or lime Tostitos. It's like the law or something.

1 teaspoon pepper
1/2 to 1 teaspoon salt
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup chopped walnuts, optional
Tortilla chips or crackers

Steps:

  • In a large bowl, beat cream cheese and lime juice until smooth. Beat in the chilies, onions, cumin, cayenne pepper until combined. Stir in corn and walnuts if desired. , Cover and refrigerate for at least 4 hours. Serve with crackers or chips.

1/4 cup chopped bell pepper
1/4 cup frozen chopped spinach, thawed
1/2 cup canned corn
1/2 cup canned black beans

1/2 teaspoon onion powder
1 teaspoon cumin

7 ounces green chilies (diced)
6 ounces jalapenos (chopped or drained-reserve juice)
1/2 cup green onion
1/4 cup red bell pepper (chopped)
1 cup mayonnaise
1 cup sour cream
1 teaspoon fresh ground pepper
1 garlic clove (minced)
1 cup monterey jack cheese (shredded)
1 cup cheddar cheese (shredded)

Steps:

  • Combine ingredients, do a taste test, if it needs more spice, add 1 teaspoons of the jalapeno juice or if you really like it hot, add 1/4 teaspoons cayenne pepper or more jalapenos.
  • Flavor is better if allowed to set overnight or up to two days.
  • Serve with corn chips.
