This Chicken Taco Salad is fresh, fast & flavorful. It's one of my favorite warm weather dinners! (Gluten free, paleo friendly)

6 cups romaine lettuce
8 oz diced chicken
1 cup black beans
1 cup corn
1 cup halved grape or cherry tomatoes
1 avocado
1/2 cup sliced green onion
1/4 cup cilantro
Tortilla strips*, tortilla chips, or pepitas
3/4 cup mayonnaise (I like avocado oil mayo)
Juice from 1 lime (1-2 Tbsp)
1-2 Tbsp water
1 tsp chili powder
1/2 tsp dried dill (or 1 Tbsp fresh)
1/2 tsp pepper
1/4 tsp salt
1/4 tsp chipotle chili powder (optional-it adds some kick!)

Steps:

  • In a large bowl, combine lettuce, chicken, black beans, corn, tomatoes, avocado, green onion, and cilantro.
  • Drizzle with salad dressing and serve with tortilla strips, chips, or pepitas.
  • In a small bowl or jar, whisk together mayonnaise, lime juice, 1 Tbsp water, chili powder, dill, pepper, salt, and chipotle chili powder.
  • Whisk until it's totally smooth. Dressing will keep in the fridge about 1 week.

This ranch chicken salad cheddar melt is infused with southwestern flavors. Piled high on pumpernickel bread with lots of melted cheese, it's a mouthwatering lunch.

3/4 pound boneless, skinless chicken thighs (or breasts)
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon coriander
1/2 teaspoon onion powder
1/4 teaspoon turmeric
1/2 tablespoon brown sugar
1 teaspoon kosher salt
5 ounces Sabra Farmer's Ranch Greek yogurt dip
4 slices pumpernickel bread
4 ounces sharp yellow cheddar cheese, sliced
tomato slices
green lettuce

Steps:

  • Combine all the spices in a small bowl.
  • Rub chicken with spice mixture and set aside.
  • Grease a skillet with cooking spray and heat over medium-high heat.
  • Place chicken on skillet and cook for about 5 minutes per side (depending on thickness of chicken) until fully cooked.
  • Remove from skillet and shred with two forks once cooled.
  • Add the shredded chicken to a medium bowl with the Farmer's Ranch Greek yogurt dip and mix together.
  • Place the cheddar cheese on each slice of bread and melt in a toaster oven.
  • Pile the chicken salad mixture on top of the bread, garnish with tomato and lettuce, top with remaining slice of bread and serve.

Ranchy goodness mixed with chicken, cucumber and red onion. An instant favorite of anyone who tries it. Serve on whole wheat tortillas with baby spinach and diced tomatoes or eat it by itself.

1 pound skinless, boneless chicken breast halves
½ large red onion, chopped
1 cucumber - peeled, seeded, and diced
2 cloves garlic, minced
1 cup ranch dressing
1 pinch ground black pepper to taste

Steps:

  • Place chicken in a saucepan; add water to cover. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until chicken is tender and no longer pink in the center, about 15 minutes. Remove chicken, let cool, and shred or cut into bite size pieces.
  • Combine the chicken, red onion, cucumber, garlic, and ranch dressing in a large bowl. Season with pepper to taste.
